In 1993 I started the culinary arts program at Delaware Technical Community College as the program’s department chairperson. During this time and now I continue to share recipes and ideas with numerous clients and students. Many of whom have their own business including food trucks. In my spare time, I cater for friends designing small parties and cooking coaching. I also volunteer at local high schools, and non-profit businesses to help feed the less fortunate. Prior to teaching I was an industry chef working at several hotels starting in London England, where I received my culinary degree at Thant College, Broadstairs, Kent England. During my time at college I was invited to work with the Royal Family at Buckingham Palace for special functions. That was a fantastic experience.
I returned to the states in 1978 and began working in hotels in Washington DC and helped open the Four Seasons Hotels in Washington DC and Philadelphia. I went out west to the Clift Hotel in San Francisco as the Executive Sous Chef for 3 years. I obtained my first Executive Chef position at the University and Whist Club in Wilmington in 1986 and taught at Delaware Tech as the Culinary Arts Department chairperson from 1993 to 2016. I stepped down from the chair position with retirement and my local private chef and cooking coaching business as a goal in mind. Hence,” Have Knives Will Travel LLC” became a reality in the Lewes and Rehoboth Delaware area in 2017.
My wife, Mary and I have traveled abroad and throughout the United States frequently over the years. In each country and state, we visited, we looked for the real foods of the area. Chicken feet in China were interesting, but not my first choice. However, each place we visited had awesome foods which I bring to the table to share in my menus.
My menu selections are varied reflecting the numerous countries and American states. I am always open to new and exciting menu options. Vegan and vegetarian cookery has increased greatly. I frequently research and develop menu options for clients, friends and family that have dietary restrictions. I will bring all the food and service equipment to your home or business and prepare, cook and serve your meal while you watch. Questions are encouraged and cooking stories are shared throughout the meal.
