Cozy up with a bowl of homemade Pasta Fagioli soup! This hearty, wholesome dish is perfect for chilly days and is as satisfying as it is simple to make. Whether you’re cooking for your family or meal prepping for the week, this classic soup is sure to warm your heart and soul.

• 2 tbsp olive oil
• 1 lb of ground beef or turkey
• 1 small onion, diced
• 2 carrots, diced
• 2 celery stalks, diced
• 3 cloves garlic, minced
• 1 can (15 oz) diced tomatoes
• 1 can (15 oz) cannellini beans, rinsed and drained
• 1 can (15 oz) kidney beans, rinsed and drained
• 4 cups vegetable broth
• 1 cup small pasta (ditalini or elbow)
• 1 tsp dried oregano
• 1 tsp dried basil
• Salt and pepper to taste
• Fresh parsley or Parmesan for garnish
