Must try, an Italian comfort food 🤤⁠
⁠
Eggplant Rollatini

Ingredients:⁠
2 eachs meduim eggplant cut lengthwise into 10 (1/4 inch thick) slices⁠
salt / pepper⁠
1 1/2 cups marinara sauce⁠
1 each large eggs⁠
1/2 cup skim ricotta cheese⁠
1/2 cup grated Parmesan cheese⁠
8 ounces frozen spinach heated through and squeezed well⁠
1 each garlic cloves minced⁠
4 ounces shredded mozzarella cheese⁠
⁠
Directions:⁠
Cut the ends from the eggplant. Cut the eggplant lengthwise 1/4 inch thick until you have 10⁠
slices⁠
Sprinkle the eggplant with salt to help remove the excess moisture and bitterness. Set aside for⁠
10-15 minuets.⁠
Preheat oven to 400f. Season the eggplant with salt and pepper and arrange on a parchment⁠
lined sheet pan. Cover tightly with aluminum foil and bake for 8-10 minuets. You want the⁠
eggplant pliable but not cooked.⁠
Spread 1/4 cup of marinara in a 13 X 9 baking dish.⁠
⁠
In a mixing bowl beat the egg then mix together with ricotta, parmesan, spinach, garlic and⁠
season to taste with salt and pepper.⁠
Pat eggplant dry with paper towels. Dividing the ricotta-spinach mixture (2 tablespoons each)⁠
evenly and spoon onto the small end of the eggplant. Starting at the small end roll the slices and⁠
arrange the seam side down into the prepared dish.⁠
Top with remaining marinara and cheese. Tightly cover with aluminum foil and bake for another⁠
10-15 minutes.⁠
Remove from oven and cool for 5 minutes⁠

Baked Brie Recipe

Ingredients:

- 1 sheet frozen puff pastry
- 1 tablespoon unsalted butter
- 1/2 cup walnuts
- 1 pound brie cheese
- 1 egg beaten
- Crackers

Instructions:

Preheat oven to 350f

Defrost puff pastry for 15-20 minuets and unfold.

In a sauce pan melt butter over medium heat.

Saute walnuts until golden brown (5 minuets).

Spread an even coat of the preserves on top of the brie.

Add the walnuts on top the brie.

Lay the puff pastry on a flat surface and place the brie on top of the pastry. Make 2 cuts each from top and bottom and each side (it will resemble a plus symbol +). Strting in the top right corner pull each corner up and toward the center of the brie going clockwise. Allow them to fall like buds of a flower and then tie using the remaining flaps. Brush the beaten egg over the sides and top of brie.

Place the brie on a sheetpan and bake for 20 minuets until pastry is golden brown. Serve with crackers.

- You can also place the pastry on top of the brie and fold the excess under the brie wheel * Melt 1/4 cup of butter in the microwave and in a bowl add 1/2 cup of brown sugar. Stir until mixture pours like pancake batter. Pour the mixture on top of the brie.

Heat 1 tablespoon of butter in saute pan and add 1/2 cup of slice almonds. Saute until golden brown and aromatic (2-4 minuets). Top onto the brown sugar brie and place in oven for 7 minutes.

Try this delicious Whiskey Sour recipe, made with simple ingredients and easy to create for your guests! It's a classic cocktail that never fails to impress. Whether you're hosting a party or just want to enjoy a refreshing drink, this Whiskey Sour is a perfect choice.

To make this cocktail, you'll need the following ingredients:

- 2 ounces of whiskey
- 3/4 ounce of fresh lemon juice
- 3/4 ounce of simple syrup
- Ice cubes
- Orange Wheel (garnish)
- Cherry (garnish)

Instructions:

1. In a cocktail shaker, combine the whiskey, lemon juice, and simple syrup.
2. Fill the shaker with ice cubes and shake well.
3. Strain the mixture into a glass filled with ice.
4. Garnish with an orange slice or cherry, if desired.
5. Serve and enjoy!
