Try something sweet ...

Coconut Flan
1 can of Evaporated milk
1 can of condensed milk
1 cup of coconut milk
6 eggs
1 tbsp of vanilla
1 cup of shredded coconut
1/2 cup of sugar
2 or 3 cups of water
Preparation ,,
put the sugar in a pan and you put the water and you place on stove on medium heat you leave it alone until you see the edges getting dark you turn a little the pan so it comes out even. when you see is all dark remove from stove and pour the caramel in a pan, Place in a separate bowl the eggs and hand whisk a little and then add all the milks and you mix it again and you add the vanilla and you pour it on the caramel pan cook in oven at 350 for 45 minutes when done let it cool and then place in the fridge.

Vegetable Pasta
Ingredients:
12 ounces whole-wheat penne pasta
(or your favorite)
4 large tomatoes, diced small
1 zucchini, diced small
2 yellow squash, diced small
1 dozen mushrooms, washed and sliced
1 cup heavy cream olive oil for cooking
5 garlic cloves, chopped fine
6 ounces fresh spinach
2 tablespoons fresh herbs (rosemary, thyme, basil, oregano, or your favorite), chopped
1 lemon, juiced
freshly grated Parmesan cheese for garnish sea salt and fresh ground pepper, to taste

Directions: Bring a medium-sized stockpot of salted water to a boil, and cook pasta to desired tenderness. Drain pasta and run room-temperature water over it to cool it off. Preheat a large sauté pan over medium-high heat. Add 1 tablespoon olive oil to preheated sauté pan. Add diced zucchini, squash, mushrooms and garlic to the preheated pan and cook for 2 minutes. Add the diced tomato, lemon juice and cream. Bring ingredients to a boil; add spinach and cooked pasta. Stir ingredients and continue to cook for another 2 to 3 minutes. Taste and adjust seasoning with salt and pepper. Stir in the chopped herbs. Serve hot, garnished with lots of Parmesan cheese. Serve with herbed garlic bread ,Enjoy like and share

Strawberry Cheesecake Dip

Ingredients:
1/2 cup fresh Florida strawberries, rinsed, dried and chopped fine
1/4 cup Florida pecans, toasted and chopped fine
1/4 cup Florida honey
1/3 cup freshly squeezed Florida orange juice
1 cup low-fat cream cheese, softened
1 cup low-fat sour cream
Assorted cookies, graham crackers and fresh Florida fruit for dipping and spreading
Directions:
Set aside 1 tablespoon each of the strawberries and pecans for garnish.
In a small bowl, lightly mix the strawberries, honey and orange juice.
In a separate bowl, blend the cream cheese and sour cream until smooth.
Add the strawberry mixture and fold together.
Fold in the pecans.
Cover and chill.
Garnish the top of the dip with the reserved strawberries and pecans.
Serve with cookies and fruit for dipping.. Enjoy , like or share

Southwestern Salad With Avocado Dressing
INGREDIENTS
Serves 5-6
Dressing
1 avocado, halved
1 clove garlic
½ teaspoon salt
½ teaspoon pepper
¼ cup olive oil
1 tablespoon cilantro
1 lime, juiced
Salad
1 head of lettuce, chopped
1 cup bell peppers, chopped
¼ cup cilantro
15 ounces (1 can) black beans
½ cup red onion, chopped
15 ounces (1 can) corn
¼ cup scallions
¾ cup tomatoes, chopped
PREPARATION
1. Add all dressing ingredients to a blender, blend until smooth.
2. In a large bowl add lettuce, peppers, cilantro, beans, onion, corn, green onion, and tomatoes.
3. Top with prepared dressing; toss to coat.
4. Enjoy!

Coconut-pumpkin Flan
Caramel:
1 cup sugar
1/3 cup water
Mix sugar and water in saucepan, cook on high heat, stirring constantly, until sugar caramelizes. Pour immediately into a 13-by-9-by-2 inch glass baking dish swirling the caramel very carefully to coat the sides.
Custard:
1 stick (1/2cup) butter
1/3 cup all-purpose flour
1/2 cup water
1- 15oz. can cream of coconut
12 oz. evaporated milk
1 tsp. vanilla
14oz. sweetened condensed milk
6 large eggs, slightly beaten
2 tbsp rum
30 oz. canned pureed pumpkin
1/8 tsp. of salt, cinnamon, nutmeg, and ground cloves
Melt butter and cool. In a large bowl whisk together flour and water until smooth and whisk in butter.
Combine cream of coconut, evaporated milk, vanilla, condensed milk, eggs, and rum. Mix well.
Mix pumpkin with sugar add flour- mixture, salt and spices. Mix well.
Pour into prepared mold. Place mold in a pan of water (baño de María)
Bake for one hour in preheated oven (350 degrees), until toothpick inserted in middle comes out clean.
Remove from water and cool and then refrigerate for several hours.
Cut into squares. Serves 8 -12. Enjoy and share and like

Rum Pound Cake (Easy recipe)
1 cup chopped pecans
1 pkg yellow cake mix
1 pkg instant vanilla pudding
4 eggs
½ cup cold water
½ cup vegetable oil
½ cup Puerto Rican rum/dark
Preheat oven to 325° F. Grease and flour bundt cake pan. Sprinkle pecans on the bottom. Mix all other ingredients together for 2 minutes. Pour batter into pan. Bake for one hour.
Invert on serving plate after it cools (10 min). Glaze: ¼ lb butter ¼ cup water 1 cup granulated sugar ½ cup rum Melt butter and stir in water and sugar. Boil 5 minutes stirring constantly. Stir in rum. When cooled drizzle and brush glaze evenly over the cake top.

Ensalada de Bacalao
(Codfish Salad) – Serves 6

2 lbs, dry/salted bacalao, desalted
4 white potatoes, boiled and cubed
1 large red onion, peeled and sliced into rings
3 tomatoes, sliced
½ green bell pepper, thinly sliced
½ red bell pepper, thinly sliced
½ cup Spanish olives
Powdered garlic
2 avocados, sliced
Salt and pepper to taste

½ cup olive oil
1 tbsp of white vinegar
3 hard boiled eggs, shelled cooled and sliced
1 small jar of red pimientos, sliced
Rinse codfish under warm running water to rinse off excess salt. Then add to a pot of boiling water, let it boil for about 20 minutes or so. Drain the water, add fresh water and boil again. Drain and let it cool. Shred or pull apart into bite size pieces using your fingers. Set aside to let drain and cool.
Boil the potatoes (do not overcook) , cool & cut in large cubes. Boil the eggs.
Place the fish in the salad bowl as the first layer. Add the other ingredients except for the olive oil, vinegar & hard boiled eggs. Make other layers with the codfish and all the ingredients until all is used up. Season with garlic poweder, salt, and pepper. Combine vinegar & olive and drizzle over the salad. Gently toss until all ingredients are well coated with the dressing. Add sliced boiled eggs, & garnish with red pimientos. Enjoy , Like and Share ,

Caribbean Pasta and Seafood Salad
1½ tbsp. lemon juice
1 tbsp. olive oil
2 c. elbow macaroni, cooked
½ c. shrimp (cooked)
½ c. diced crab meat (cooked)
½ c. diced lobster meat (cooked)
2 hard boiled eggs, chopped
2 tbsp. green pepper, chopped
2 tbsp. roasted red peppers, chopped
2 tbsp. onion, chopped
½ c. celery, chopped
½ c. tomato, chopped
¼ c. stuffed olives, chopped
1 tsp. salt
1 tsp. coarse black pepper
½ c. salad dressing or Mayo
Mix lemon juice, olive oil and combine with pasta. Chill several hours, stirring occasionally. Fold in Mayo or dressing and the rest of the ingredients. At this time you can serve or chill for later. Arrange on crisp salad greens. Serves 4 to 6. Enjoy ,Like and share ...

Bacalaitos
(10 bacalaitos)
1/4 lb. bacalao filet
3/4 cup flour
1/2 tsp. baking powder
1/3 tsp. salt
3/4 cup bacalao broth
1tsp. black pepper
2 tsp. crushed garlic
oil for frying
Today we can buy processed bacalao that is not "dry" and does not need to soak overnight or boil for hours and hours. Make sure you get the soft bacalao that has been deboned. Sometimes it comes in a wooden box or in platics bags. They have it at some Walmart stores and Fiesta Grocery stores and many others.
Rinse the bacalao and tear into smaller pieces. Boil in plenty of water for about 20 minutes or so. Discard water and add fresh water and boil again for another 20 minutes. Let it cool in the water and save the water. Remove the bacalao and drain in a metal drainer and wait for it to cool down (save the broth). Once cool to the touch, tear the pieces into smaller little tiny pieces and set it aside. If you hold it between your fingers it separates itself.
In a medium bowl combine the flour, baking powder, salt, pepper, and garlic. Add the broth and whisk. The mixture should look like pancake batter. Then add the drained bacalao and whisk again. DO NOT use an electric appliance to stir this stuff because the bacalao will become like fiber and you will end up with a matty mess that will have to be thrown away. I'm speaking from experience here. The batter should look like thin pancake batter. If too thick just add a bit more broth and whisk. If you put too much broth add a bit of flour - just a bit.
Spoon the batter by ½ cup fulls into hot oil. The bacalaitos should be fried over high heat turning only once. They should be golden on both sides. Drain on paper towels before serving. If they are getting too brown too fast lowe heat a bit.
Any extra fish or batter may be refrigerated for a few days or frozen for later use. Remember that this recipe is only for about 10 bacalaitos - so multiply if you must. Enjoy like and share ...

Okay people ever wonder what to do when you have cake mix but no milk or eggs, and you have crushed pineapple and cherry pie fillings and butter and crushed walnut. Well why not make a dump cake easy to make.. just dump the pineapple, cherry pie filling in a glass pan, even the pineapple, Then put cherry filling on top even it out ,Then get cake mix pour on top make sure to even it out then cut (2) butter sticks squares and put all over there cake mix and spread the word walnut all over the top. Preheat oven 325 and bake for 1 hr .. Enjoy ... I will post pictures I did mines with out walnuts.. keep posted for picture..
