For the Roasted Beets:

3 medium golden beets, peeled & cubed
1 tbsp olive oil
Β½ tsp salt
ΒΌ tsp black pepper
Β½ tsp honey (optional, for caramelization)
For the Dressing:
2 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp honey or maple syrup
Β½ tsp Dijon mustard
ΒΌ tsp salt
ΒΌ tsp black pepper
For the Salad:
ΒΌ cup pistachios, chopped
ΒΌ cup crumbled feta cheese
2 cups mixed greens (arugula, baby spinach, or kale)
1 tbsp fresh mint or basil (optional)
