A few suggestions for planning a wedding buffet - chicken and/or beef will have the widest appeal for meat eaters and have good hold time on a buffet, a complex salad or starch is then good as a side and for vegetarians, then children will usually want something simple like ungarnished vegetables or a topping that can be taken off the meat dish. Here we have a classic Chicken Marsala and a Beef Bourguignon with vegetables, mashed potatoes and a yummy salad. Thanks to Chef Jan and Chef Brian for making these delicious dishes!

Lovely night at the Pavilion - outdoor wedding then indoor reception. A few notes - Houston weather rarely cooperated, so if you are holding part of your event outside I would recommend having lots of seating, shade & refreshments on hand, especially if you encounter delays as we did at this event when the valet lost the groom’s car keys. I think it is also always a good idea to ask about the path of the sun at a venue, as well as sunrise/sunset times - this will help you plan the layout and times of the evening.

Why not try a new arrangement for your plates? Stacking is fine but laying them out on a fresh linen or in a basket can add some extra flair.

Deep Fried Mac & Cheese Bites - it’s hard to get all your daily calories in one bite but our team keeps trying!
Kind of an unusual approach for us - we recently did 150 boxed lunches for a client’s 97th birthday party - this is a great approach for locations that don’t have onsite kitchens or when you expect people to be arriving throughout the evening and not at a set time. A few things to consider - wrapping individual elements so they don’t leak, have variations for various dietary requirements, make sure the box is big enough but not too big, think starter, main and dessert in each box, remember secondary items like napkins, condiments and service ware.
The monthly “Tea and Tour” is back at the Bishop’s Palace in Galveston!
This is one of my favorite wedding photos - the parents, anxious and excited at the same time, holding back but there for their daughter; the soft but vibrant light of the Majestic Metro, her poise and that veil! Even the exit sign suggests a story - should she go forward or turn left? PS she went forward.

So happy we got a chance to work in the Bryan Museum’s Conservatory - such a beautiful space and the nicest people. As an added bonus, the event was for the Turtle Island Restoration Network who are working so hard to save the sea turtles!

Quick summary of our last tasting, which I think features a great, full-bodied menu. It includes a pre-set salad course, a series of passed appetizers along with two proteins and two sides. On the day it would of course be a cake but for today we did a fun arrangement of chocolate-dipped strawberries, almond macaroons and heart-shaped bon-bons.
She taught me how to cook and even now, decades later, flys down from Alaska to work with us on events just so we have more time together! Happy Mother’s Day!

Top takeaways from #LRAEXPO17 - be consistent in your rules, use checklists, delegate appropriately and follow up, clean lines and natural products are still in, (as are smaller displays in Le Cruset-style pans but that won't last), and the new technology in chafers is amazing!
