“The Double Smasher.”
This burger took me (3) years to perfect. I started making them in my down time when I was working at an assisted living facility. Trying all different kinds of combinations, spices, buns, sauces, condiments… you name it, I can almost guarantee I tried it on a burger…. But nothing was hitting. Nothing was “WOWING” me. Then one day (true story), I was watching “Apollo 13” and that scene where Ken Mattingly had to build a CO2 filtration system from parts onboard the shuttle so the astronauts could breathe and survive… I started to literally think how I could deconstruct and then re-construct a killer burger… the answer was simplicity. Simplify the ingredients so when you take that first bite nothing overpowers any other flavor and it all works together harmoniously. Hence, all the parts Ken used to build the CO2 filter were all simple parts (parts of the shuttle) and it worked. I know, crazy story. But that’s how this burger came about.
I remember starting out (about 1.5 years ago) prepping 12 burgers for the night for service. Now, I’m prepping 60-70 and selling out. It’s ramping up. I have people coming to Triple Crown Bingo and asking for me and/or the burger. And, ain’t gonna lie… that’s a cool feeling. To know you hit someone in the EFFING gut with a punch of bad ass flavorful food is an EPIC win in my recipe book.
Sorry, not sorry for the history, “E true Hollywood” bio on this burger, but when you can feel you got something good… like Mikey wrote in “The Bear,” you LET IT RIP!
