Marshmallow Dip
Ingredients
1 cup milk chocolate chips
2 tablespoons milk
2 cups marshmallows, divided (I like to use mini marshmallows)
Graham crackers for serving

Instructions

Combine chocolate chips, milk and 1½ cups of marshmallows in a sauce pan. Heat over medium low and stir until melted and smooth.
Pour into an oven safe dish and top with remaining marshmallows.
Broil 1 minute or just until marshmallows are lightly toasted.
Serve warm with graham crackers or fresh fruit.

Hi All, This weekend Judy & I have volunteered to prepare meals for the Girl Scouts retreat in the Idyllwild area. The retreat is Friday afternoon through Sunday afternoon June 26th - 28th. Four to five meals and snacks. We are hopping for 1 or 2 people to volunteer to help with prep, serving and cleaning. We have our own cabin for the kitchen crew. It's a little rough up there, but it should be a lot of fun. The weather should be in the eighties this weekend in the San Jacinto mountains. So if you are interested or know someone who would be please contact us.

You know the old saying "When Life Hands You Lemons Make Lemonade" forget the lemonade and make Limoncello instead. Enjoy!

Limoncello

Ingredients
Makes about 34 (2 ounce) servings

10 lemons

1 liter vodka (100 proof is best)

3 cups white sugar

4 cups water

Directions
Zest the lemons (no pith, the white part under the rind, it’s bitter), and place zest into a large glass bottle or jar. Pour in vodka. Cover loosely and let infuse for a week to 10 days at room temperature.

After a week to 10 days, combine sugar and water in a medium saucepan. Bring to a boil. DO NOT STIR. Boil for 15 minutes. Allow syrup to cool to room temperature.

Stir vodka mixture into syrup. Strain into glass bottles, and seal each bottle with a cork. Let mixture age for 2 weeks at room temperature.

Place bottled liqueur into the freezer. When icy cold, serve in chilled vodka glasses or shot glasses.
