Got bored, so pounded out a boneless chicken breast, seasoned it well, then rolled it up stuffed with asparagus, sundried tomatoes, and double cheddar cheese...than bacon wrapped it, smoked it, and finished with bbq sauce...damn tasty with a cold one!

Quick fix for dinner last night...Philly cheese steaks...green and red peppers, lots of onions, garlic, and, of course, bacon! Smothered in melted provolone

Smoked a 16 lb turkey yesterday, and end result was a openfaced hot smoked turkey sandwich on potato bread, smothered in mashed potatoes, stuffing, French fried onions, and a thick, rich gravy made from the smoked turkey drippings. Delish!

So here is what those fatty beef ribs look like after a day in the mojo marinade and 5 hours in the smoker over hickory/oaks chips...gonna bbq them and hit them on the grill for a few...ribeye heaven on a bone!

Today's project...rib end boneless pork loin brined and smoked, finished in a orange juice glaze topped with crispy prosciutto ...with sweet corn, broccoli and carrots, and garlic bread...yummy!

One good thing about being a butcher...you get to chippidty chop your own choice Angus beef ribs...almost looks like some good ol lamb rib chops, but that's all ribeye you are looking at there...waiting on my mojo marinade to chill and then they get to soak for a day...magic happens tomorrow night...
