My son was born on March 26, but we always celebrate on the 25th—a special and meaningful day for us ✨ “FEAST OF THE ANNUNCIATION “.This year, he asked for a Mediterranean dessert, so I made something truly unique just for him.

A delicate tart filled with creamy ashta, crowned with soft, rolled halawet el jebn, and finished with crushed pistachios and a drizzle of fragrant sugar syrup 🌿

The result? Even better than I imagined… rich, floral, lightly sweet, and made with so much love for his special day 🤍

First trial making Halawet Jibn and I’m honestly so happy with how it turned out! ✨
Soft, sweet, and filled with creamy goodness, finished with a sprinkle of pistachios. The flavor is absolutely delicious, but the texture came out a little thicker than I wanted—next time I’ll work on making the layer thinner and more delicate.

Baking and dessert making is all about learning with every try, and this one was definitely a success! 💚

It’s Lent season, and like many parents, I struggle to get my son to eat lentils 🙈

So I got creative… and this recipe was a BIG win! He loved it so much he asked for seconds 🥹

If your kids refuse lentils, try this — it might surprise you too!

✨ Crispy Baked Lentil & Quinoa Tray

Ingredients:
• Boiled lentils
• Cooked quinoa
• 1 small onion, finely chopped
• Grated white cheese
• Cumin
• Salt
• Mixed spices
• 2 tablespoons olive oil
• A small extra pinch of salt (to help it bind)

Instructions:
1. Preheat oven.
2. Mix lentils, quinoa, onion, cheese, spices, salt, and olive oil together.
3. Spread the mixture in a lightly greased baking tray in a thin, even layer.
4. Bake until golden and slightly crispy on top.
5. Serve with yogurt or a drizzle of pomegranate molasses.
