It’s Lent season, and like many parents, I struggle to get my son to eat lentils 🙈
So I got creative… and this recipe was a BIG win! He loved it so much he asked for seconds 🥹
If your kids refuse lentils, try this — it might surprise you too!
✨ Crispy Baked Lentil & Quinoa Tray
Ingredients:
• Boiled lentils
• Cooked quinoa
• 1 small onion, finely chopped
• Grated white cheese
• Cumin
• Salt
• Mixed spices
• 2 tablespoons olive oil
• A small extra pinch of salt (to help it bind)
Instructions:
1. Preheat oven.
2. Mix lentils, quinoa, onion, cheese, spices, salt, and olive oil together.
3. Spread the mixture in a lightly greased baking tray in a thin, even layer.
4. Bake until golden and slightly crispy on top.
5. Serve with yogurt or a drizzle of pomegranate molasses.
