Pineapple Pecan Cream Cheese Pound Cake

Cake Ingredients:

1½ cups (3 sticks) unsalted butter, softened

8 oz cream cheese, softened

3 cups granulated sugar

6 large eggs, room temperature

3 cups all-purpose flour, sifted

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon vanilla extract

1 teaspoon pineapple or coconut extract (optional)

1 cup crushed pineapple, well-drained

1 cup chopped pecans, toasted

Pineapple Glaze (Optional but Recommended):

1 cup powdered sugar

2–3 tablespoons pineapple juice (from drained pineapple or canned juice)

½ teaspoon vanilla extract

Pinch of salt

Instructions

1. Make the Cake:
Preheat oven to 325°F (163°C). Grease and flour a 10-inch bundt or tube pan.

In a large bowl, cream butter, cream cheese, and sugar together until very light and fluffy (about 4–5 minutes).

Beat in eggs one at a time, mixing well after each.

In a separate bowl, whisk together flour, baking powder, and salt.

Gradually add dry ingredients to the wet mixture, mixing until just combined.

Stir in vanilla (and pineapple or coconut extract if using).

Gently fold in the drained crushed pineapple and pecans.

Spoon batter evenly into the prepared pan and smooth the top.

Bake for 75–85 minutes, or until a toothpick inserted in the center comes out clean.

Cool in pan for 15–20 minutes, then turn out onto a wire rack to cool completely.

2. Make the Pineapple Glaze:
In a small bowl, whisk together powdered sugar, pineapple juice, and vanilla until smooth.

Drizzle over the completely cooled cake.
