Throwback Thursday-Did you know I shucked an oyster for Martha herself?!?
Several years ago I was invited to New York to shuck oysters at Martha's Wine Club launch and it was a highlight of my career.
Martha walked down the hall towards me with several assistants behind her with clipboards. She came up to me and took the freshly shucked oyster from my hand, ate it, looked me in the eye, paused for a few seconds and said, "Let's make sure we get you a bucket for the empty shells. I would like to grind them and feed them to my chickens." Then she walked away...

I'm Austin-for those of you who don't know me and for those who do-well, here's some more about me and why I love oysters so..⁠⁠⁠
I grew up here in the Berkshires and ate some bad supermarket seafood growing up..To be quite frank, I never really knew seafood to be palatable let alone good. To me the word 'Seafood' brought thoughts of unpleasant aromas and tastes.⁠⁠⁠
A lot changed when I started working with food and traveling. I kept getting 'lured' to the coast to try fish and shellfish again. I didn't actually try my first oyster until I was about 21 years old and I'll be honest, it wasn't from the best source. But it most definitely got my attention as to why so many people were obsessed with this food and all the hype that went along with the oyster culture.⁠⁠⁠
I've met some amazing fish purveyors, fishermen, oyster farmers and other oyster professionals that inspire me constantly to learn more, shuck and present better, and teach more. ⁠⁠⁠
Over the past 15+ years I've worked around the Berkshires and have managed to intertwine my love for oysters and fresh fish wherever I go with one big idea- change the way those living inland experience some of our coasts most amazing food.⁠⁠⁠⁠⁠

Hedley is posted at the oyster bar today (Sunday) at 'HiveCloud' 12-4.

An oyster tasting primer.
Some new oyster eaters may say to themselves, "Well all oysters just kinda look and taste the same- salty or oceany."
Although this is true, that's not all oysters taste like. Like wine, 2 oysters may be the same species, but grown in different bodies of water under different growing conditions and they can have many distinct differences. Here are a few tasting/ identifying words we see when tasting different oysters:
Cup Size-is it a deep shell or thin and wide? oysters with deeper shells tend to have richer and fuller meat.
Briny- How salty is the oyster? Does the oyster taste like you just licked a salt shaker or is it milder with a clean finish?
Minerally- minerals like copper and iron are some characteristic tastes some oysters have.
Buttery- Creamy and plump oyster bellies that give you that buttery coating mouth feel.
Vegetal- Seaweed or cucumber are some common vegetal notes in many oysters.
This week's Oyster spotlight is the 'Moondancer', oysters grown in Maine's Damariscotta River in Walpole, Maine. They have a medium deep cup. The taste is a big briny kiss to start with some vegetal notes and a sweet and crisp finish. They are said to transport you to a perfect summer afternoon in Maine.
Serving these at 'HiveCloud' this Saturday and Sunday 12-4. Come and try some for yourself and see if you can pick out any other tasting notes.

We are really gearing up now as the temperature rises and so does the desire for refreshing cocktails and crisp boutique oysters all in a laid back garden party setting.

Ready to get the low down on the oysters we're shucking this weekend 'HiveCloud'???
Pictured- Harvesting 'Standish Shore' Oysters from Duxbury, MA. Standish Shore Oysters are grown on a farm owned by , a highly reputable source for oysters and oyster news and knowledge. These oysters are well balanced in the brine to sweet buttery texture and flavor.
We'll also have some 'Sea Sirens' from aka 'PROG'. Owner Bill Doyle and his team grow some pretty spectacular boutique Oysters on the Cape and these ones are one of my favorites with that classic Massachusetts brine and a crisp clean finish.
These and a special Windy Hill Farm Blueberry Mignonette and a specialty cocktail and you're on your way to a special weekend. See you there Saturday and Sunday 12-4.

Take a turn onto Winter Point Road in Bath, Maine and you will be surrounded by some of the most beautiful views you have ever seen.
I visited this farm about 10 years ago now but I can still remember how nice that day was and talking with 3rd generation Oyster farmer, John Hennessey.
"The work is hard and sometimes I ask myself why I do this on early and cold winter mornings but then I just look up and take a look around."
