What an amazing opportunity this week to do good with good people and feel real good doing it!

We were so lucky to have the chance to host the Giving Kitchen up at Caswell Farm & Wedding Barn for a tour of the farm and an intimate little dinner in the barn!

For those who don’t know, is a fantastic non profit and a cause near and dear to our hearts. They raise funds to help restaurant workers through times of need. From helping with rent and bills during an illness to securing mental health services in times of crisis, the work they do for the hospitality community is invaluable.

These generous donors won an auction for a week on the Maine coast and Barn & Table Catering was so happy to join Nauti Sisters Sea Farm, Orono Brewing Company, maine vodka and setlzer and Chebeague Island Inn in showing them a great time while they were here.

Farmer Chris gave everyone a tour of the property at A Little Something at Caswell Farm and then they all joined us in the barn for four woodfired courses all from within a mile of their seats! Thanks to our neighbors Sunflower Farm and D'Ameri Acres Farm Market for supplying the ingredients we don’t grow on the farm!

Maple Bourbon Flank Steak. Wild Ramp Chimichurri.

We try and get as many ingredients as possible for our dishes from the farm here at . You’ve all seen posts of our Maple Syrup production every spring. That liquid gold makes its way into all sorts of dressings and marinades through the year.

A bunch of years back, during Covid times, I had ordered a case of ramps for a dinner we were doing. In sustainable circles there’s kind of an ethical way to harvest these, leaving the bulbs in the ground to come back for years to come. Unbeknownst to me, this case I ordered was not that. Full plants uprooted and sent to market. So I carefully trimmed them and began scattering the bulbs all over the woods and squishy spots on the farm. Wouldn’t you know we have a healthy ramp population dotting the property every spring!

For those that don’t know, ramps are a member of the allium family, related to garlic and onions, that grow wild around the state’s swampy, wooded, shady areas. The small bulbs look like scallions, but the large broad leaves have the flavor of green, fresh garlic. We grind this into a Chimichurri, like pesto, with white balsamic, olive oil and a touch of lemon and honey. It freezes well for use throughout the season on this perennial favorite dish for the Farm Tasting Menu. Glad we finally got a pretty picture of it!

Brick Oven Chicken with Za’atar and Preserved Lemon.

This dish has been a menu staple since we launched the Farm Tasting Menu back in 2021. The salty lemon flavor and unexpected spice blend of Sumac, Thyme and Sesame get kissed by a hint of smoke from the wood fired oven. It’s a perennial crowd pleaser.

Ooooof! It’s been a busy one!

2025 got off to a busy start. June and July have been non-stop action with so many great weddings, rehearsals, brunches, graduation parties and celebrations. I feel like we’ve been head down, knives up cooking some of the best meals of Barn & Table’s history and making some fun additions to our workspace here at the farm. We came out wheels on fire this year! And we’re all psyched for a little break this week.

Managing the socials hasn’t been easy this year. It’s just a space I prefer not to go to if I can help it. The good intention of making a fun post about the business and great food always seems to spiral into the barrage of insanity that the world is experiencing.

But rest assured, we out here keeping the fires burning and plating up some delicious meals. I know there’s some great food photos coming our way and we cant wait to share them!

We are getting SO excited to get started on our busy season! And this time of year I always find myself fielding some questions about table design so let’s discuss some do’s and don’ts for your family style service! “Keep it Simple” is the name of the game here.

A Family Style meal service is larger platters of food being delivered to each table to be passed and shared by your guests. It makes for an intimate and engaging seated dinner without all the stuffy formality and expense of a plated style meal. But a Family Style meal does require some real estate.

To keep service smooth and clean for your caterer, we always recommend keeping your table furnishings to a minimum. Simple table runners and bud vases leave us enough room to efficiently deliver four or five platters to each table without having to shuffle a bunch of things around your guests. Complex floral arrangements, candelabras (and even board games, we’ve seen it all !!) make this service much more clunky and difficult.

It’s that time of year again! Whew! After a long hibernation, the temperatures are finally rising and it’s maple syrup time at Caswell Farm! We take a lot of care to get as many of Barn & Table’s ingredients from the farm as we can. And tapping the maple trees for the syrup that will be used in a whole bunch of recipes for the year to come is a right of spring! Our team will be sitting around the fire watching the sap boil this weekend and we hope you’ll pop in to say hi and daydream about warmer days ahead with us.

Moxie + Ginger Braised Brisket. A classic favorite for the cooler weather months. For the uninitiated, Moxie is the official state beverage of Maine. Dating back as far as its more popular contemporaries, Cola and Root Beer, this hidden gem of an old “health Tonic” offers a perfect balance of sweet soft drink and herbal notes. As a beverage it can be a pretty polarizing subject. But as an ingredient in our Brisket Braise it’s a perfect match with plenty of fresh ginger, garlic and thyme!
