Got tired of the same old starches and wanted to try a new substitute; sphagetti squash. So much healthier than pasta but can be used in a similar way. Easy to cook too (just stick it in the oven halved...although I must say you need some super steady knife 'cause that sucker is hard to pry in to). Yesterday I made one half in the traditional way looking like spaghetti, and tonight I tried it as patties. Very versatile vegetable. I look forward to seeing what more I can do. Let me know what you think.
