Hello Everyone, my apologies for not keeping up on this site very well.

But as promised, here is my (actually my mother in laws) Cheesy Potatoes Recipe:

2 lbs. Frozen Hash Browns (the cubed style)
1/2 cup Melted Butter
1 tsp. of Salt (optional, since cheese has salt in it, I omit this)
1/4 tsp. Pepper
1/2 cup Chopped Onions
8 oz. Sour Cream
1 can Cream of Mushroom Soup
1/2 jar Cheese Wiz
4 cups of Shredded Cheddar/Monterey Jack Cheese
Optional:
2 cups of Crushed Corn Flakes
1/4 cup Melted Butter

Defrost Potatoes. Preheat oven to 350. Melt the 1/2 cup of butter in a pan, add onions and sauce for 2-3 minutes until they start to become clear. If you like a sweeter taste, cover the pan and continue to cook the onions for 20-25 minutes on a medium -low flame to caramelize them. Remove from heat, add salt, pepper, soup, sour cream, cheese wiz and 2 cups of shredded cheese. Stir well to combine. Put defrosted potatoes in a large bowl, add mixture and stir to coat. Use cooking spray to coat a casserole pan, any will do, just keep in mind the thicker the layer of potatoes the more time they will need in the oven to heat the potatoes in the center as well as melt the cheeses. Make at 350 for 1 hour. If using the corn flakes, melt the butter add the crumbled corn flakes, mix well and top the potatoes at the half way mark (30 minutes) then continue to bake to completion. If not using corn flakes, top the potatoes off with the remaining 2 cups of cheese 10-15 minutes before they are done.
