Our third course for the Farm to Table Dinner on Saturday Sept. 26 is released!
This course highlights Hawkeye Buffalo and Cattle Ranch, a 260 farm located southwest of Fredericksburg. Forty bison and twenty Polled Hereford cows are raised in open pastures, riverbottom woods with oxbow lakes, prairie remnants, and oak and hickory savannah. The ranch strives for happy, healthy animals using regenerative practices that focus on balancing the rhythms of nature, the quality of life for the animals, and the resilience and practicality of farm resources.
Martha says, "Always, what's most important to me is quality of life for everyone and everything living here: the bees, wildlife, my neighbors, future generations -- and happy, healthy animals connected to the land." Martha was raised on the farm and graduated from the University of Iowa. She was a teacher in Denver, Colorado before coming home to take over the operation in 2011. Martha also works for Practical Farmers of Iowa helping families with farm transition. The ranch sells beef and bison cuts from an open-by-apointment farm store and hosts farm tours throughout the summer.
