Chicken and nopales over white rice. Yum.

Recipe:

1 jar of nopales
5 boneless chicken thighs
1 tblsp. Garlic powder
1 tblps cumin
1 tblps salt
2 cups of water
1 tsp. Lemon pepper
1/4 cup olive oil

Drain noplales, rinse. Cut thighs into skinny strips. Fry the chicken until mostly cooked, in olive oil. All the spices and stir. Add the nopales. Stir and add the 2 cups of water. Cover and cook on medium low with the lid on your pot. Bring to a boil and let rest after you turn the pot off.

Prepare some plain white rice. Scoop your chicken and nopales over your rice. Add your favorite salsa if you like it hot! Feeds 6.

Batesville, Texas is the Spinach capital of the USA. Zavala County has Popeye as their mascot. As a young girl in high school we ate lots of spinach and eggs with cheese when we had lunch during detasseling season. It is still one of my favorites in a tortilla. Special morning, remembering my roots. Oh, and I grew my own chile pequin or chile del Monte. Called this because it grows wild in Texas.

It's that time again. I will let you know when I have some for purchasing. Chicken, cheddar cheese, jalapeno. I also have Vegan version of these for sale. Maybe next Saturday! I will have hot green salsa also.
