This is a clip from "the risotto class" on April 22 this past Thursday, a group of 12 foodies got together at a private home in Uniondale for a cooking demonstration and a meal of spring risotto, creations, composed salads, and crème brûlée. Everyone had fun with food and fine dining.!! thanks to Marianne Flores for letting us use her lovely home and really nice kitchen and thank you to Joanie Cicak for being the most awesome right hand assistant, and to all that attended. More Fun with Food and Fine Dining!! This past Saturday, I had the pleasure of catering a cozy dinner party for a lovely woman's 80th birthday celebration, which was a surprise party attended by 16 family members. Everyone in attendance was delightful. The menu featured chicken roulade with kale and mustard bread stuffing, the dark and light rye croutons created a visually appealing pattern when the roulade was sliced and plated.
The first side dish was a twice-baked potato casserole filled with English cheddar and Serrano cream, topped with crumbled bacon and chives.
The second side dish consisted of roasted Italian vegetables tossed in olive oil, balsamic vinegar, fresh garlic, Himalayan pink salt, and cracked black pepper. The guests were thrilled with the meal. We are now scheduling an in-home cooking class for January.
