Spanakoptia - Hand pies made from spinach and phyllo dough

Fresh corn salad - corn from Muskrat Farm mixed with The Farm at Sunnyside tomatoes and fresh herbs

All sold as one plate at $22. Vegetarian and Alfa Gal friendly

Summer is not the best time for growing dark leafy greens, so when one of our regular market customers let us know about the wonder of sweet potato leaves, we were immediately on board! This spinach substitute is not only packed with nutrients, but also gives us the opportunity to take advantage of multiple parts of the same plant.

It was a little slow to catch on, but now that more of our customers have given them a try, we find they are coming back for more! Find us at the Rappahannock County Farmers' Market this Saturday for this awesome addition to your soups and stir-fries…and if you ask Amanda, they have a delightful artichoke flavor when sautéed in butter!

Happy Friday folks! I hope to see all of your lovely faces tomorrow 8/15 at Rappahannock County Farmers' Market for a delicious breakfast sandwich and some other local goodies! This weeks sandwich pays tribute to my favorite season of the year! Tomatoes! Tomato jam and bacon bits is what you will find on this weeks sandwich!
