Wild Mushroom & Fiddlehead risotto.
Oyster mushrooms, morels, porcini, lobster mushrooms, sh*ttake, crimini….very, very ‘Shroomie! The fiddleheads remind me of asparagus a lot. All in all a soul satisfying foragers supper.

I found my new favorite cut of beef!
I was always a ribeye guy, just for the pure ratio of fat to meat…um, yuuuum! My close second is the flatiron steak, so meaty & flavorful…but lacking in the tender & juicy arena.
Enter: The Highland Beef Sirloin. Meaty & flavorful, tender & juicy…with just the right amount of chew. It’s like the perfect steak experience. Salt, cracked pepper & powdered garlic scapes (think “garlic lite”) seared in a little bacon fat from our smokehouse bacon. Sliced up & sittin’ pretty next to a steakhouse wedge salad.
You don’t even miss the taters😉

If you want to give ANY highland beef a try…NY’s, Ribeyes, filets, ground… anything. All of it. All good.

Highland Beef Chili. The best pot of chili I’ve made in a long time, I can only attribute that to the Premium Highland Beef from . Otherwise, I made it just like I always do. Holy Tortillas this turned out good. Even better on day 2-3 (it needed time for some heat to mellow😈) I whipped up a batch of cornbread & Jalapeno hot-honey butter. So it begs the question. Are you ALL the fixins’ or Diner Traditional? Lemme know in the comments!?
