I’m back!!!!

I’m going to be providing individual weekly meals for people. It’s in the beginning stages and will be priced between $10-12 a meal. (this will be dependent on the protein that is used. ) I will be working on menus and will be offered per week. I’m working on sample menus for everyone to see. If this sounds like something you may be interested in, shoot me a text and I’ll put you on my list to get you information. 9402551659. Please include your name and give me your top three favorite proteins, top three favorite veggies and any allergies you may have. I will try to compile menus using those ingredients. All meals will be picked up at predetermined locations for the week.

The next Box lunch is Friday December 4th. Slow Smoked Pulled Pork sandwich with homemade soda pop BBQ sauce I make in house, creamy potato salad, crispy chips, pickle & from scratch cookie for only $8.00. First come first served. Order yours before I fill up. Have to have a minimum of 10 order to deliver to your location. (Boyd, Bridgeport, Decatur). Please share with anyone else you may think would be interested. Today I ventured out and have tried new methods to preserving food for my son at college. I will share some of my tricks for anyone interested. First on my Old Fashioned Donuts...I kept my corn oil at right around 330-350 rather then the higher temp of 375. I like the slower cooking time for the overall outcome. I did make my own powdered sugar, which if you haven't ever made it is super easy and empowering. I'll never worry about running out of that again. I always seemed to be a cup short until NOW. I will preserve these in a freezer bag with all air removed so they don't get stale. He can take them out to defrost or heat in the microwave. On a savory note I decided to make lasagna for my family, but hated that I couldn't share the goodness with my college son. I had container but none that I thought would hold up to being in the freezer and being reheated until I remembered my cakes in a jar I had sent him a few weeks back. Why wouldn't lasagna work? Well we are about to find out how well this will preserve the flavor and authenticity of the dish. I'll keep you posted.

Helpful tips I used today- I didn't want to dirty my big cutting board to roll out the dough so I put down the pantry non stick roll on the counter and then topped that with wax paper. This prevents the wax paper from sliding around as you roll it out and it's easy to clean up.....

Because I used a mason jar for the lasagna I opted to go with rigatoni noodles instead of lasagna noodles. These noodles have lots of crevices for that cheese and sauce to creep into making the end result moist and punched with flavor. Make sure to put the lid on AFTER you put it in the oven and baked it. Screw the lid on tightly and you will hear a pop just like when you can jelly. Let it cool before freezing and then take out when you need it.
