🥬 Herby Ranch Salad with Goat Cheese
For the Ranch Dressing:
• 1 cup mayonnaise
• 3/4 - 1 cup buttermilk
• 2 tbsp fresh chives, finely chopped
• 2 tbsp fresh parsley, finely chopped
• 2 tbsp fresh dill, finely chopped
• 2 green onions, white parts finely sliced
• 2-3 garlic cloves, grated
• 1 tablespoon lemon juice
• 1 teaspoon white wine vinegar
• 1/2 tablespoon Worcestershire
• cayenne powder, to taste
• 1 tsp kosher salt
• 1/2 tsp freshly ground black pepper
Whisk together all ingredients until smooth. For a chunkier, rustic dressing, hand chop the herbs and green onions. For a silky dressing, blend everything until smooth. Add additional buttermilk until desired consistency. Taste and adjust lemon juice, vinegar, Worcestershire, cayenne, salt and pepper, if necessary. Refrigerate for at least 30 minutes before serving.
For the Salad:
• 1 head iceberg lettuce, chopped and washed
• 1 head green leaf lettuce, chopped and washed
• 1 head butter lettuce, torn into bite-sized pieces and washed
• 4 radishes, thinly sliced into half-moons
• 1 cup sugar snap peas, thinly sliced on a bias
• 1/2 English cucumber, thinly sliced into half-moons
• 2 green onions, green parts finely sliced
• 4 oz goat cheese, crumbled
• homemade croutons
Assemble:
Combine the lettuces in a large serving bowl. Dress with the ranch, then add salt and freshly cracked black pepper to taste. Top with the sliced radishes, sugar snap peas, cucumber, and green onions. Sprinkle over the goat cheese and a generous handful of homemade croutons.
Serve immediately.
👩🏼🍳Chef Notes:
• My salad formula is simple: 3 vegetables + 1 cheese + 1 crunch component
• I like to make my own homemade croutons and I always make them breadcrumb-sized so they add crunch to every bite
• Buttermilk is the key to this ranch dressing. Its signature tang simply can’t be replicated, so don’t substitute it
