And don’t let the gluten free scare you. I made breakfast for everyone in the bakery today on the gluten free sourdough and all the gluten eaters enjoyed it too!
As a reminder I myself am a celiac and often wear PPE when handling flour to protect myself from breathing it in so paranoia over cross contamination is important to me personally. That’s why I’ve started using those purple labels to help people easily identity gluten free items. It’s a trend that is spreading across the hospitality industry and I am all for it! 💜
I was baking these gluten free sourdoughs in a purple silicone pan to help avoid cross contamination but in the end I switched to using disposable pans to ensure there was zero risk. Your bread comes in the pan it was baked in so you know it was made safely!
I’ve had a few people ask about slicing. I don’t have a slicer at the bakery and even if I did I wouldn’t want to slice the gluten free on the same machine. I also enjoy the freedom of cutting a thing slice for toast and a big chunk for soup but that’s just me 😁
