I've always been very fascinated with different types of udon from Japan. Preparing it by hand is a reward like no other as you can taste the difference in texture. I have always wanted to make this specific new year udon dish from Toshigi prefecture of Japan known as θ³γγ©γ or "ear udon," as the shape is formed to resemble, "the devil's ear." it is said that if you eat this on new years day, the devil will not be able to listen to your family so no bad luck with occur throughout the year!
Since it's from the Kanto region, the broth is a soy sauce base. It's usually topped with kamaboko and date maki, but since I didn't have time to make either one, nitamago will do π.
