Dear friends,

Our Catering is able to cook and serve for large gatherings.

For example, we had a request for pig a roast.🐷
That’s why we cooked two at the same time to sustain the Customers appetite.

If you would prefer, we can also do whole lamb, just with simple seasoning and olive oil like they do in Mediterranean.
Mostly the request is for large cut of beef season with Rock salt just like the do down south in Argentina.

We strive in our BBQ for great flavor, and simplicity.

One of our specialized services is to design a specialty cocktail🍸🍹 based on your personal favorite alcohol or recipe and then custom blend it for you. Do a blind tasting to get feedback and of course name it to your specification.

For example, at recent wedding 💒 we designed a version of Paloma cocktail, featuring Hudson Valley’s harvest bounty.
It was so popular that it actually outperformed all of the other beverages at the full bar.🍸🍹🥃🍷

We were honored to be selected for a third year in a row to cater to ground crew and front of the house at private aviation in Stuart Airport, New York.✈️🧑‍✈️

Our spread included the most popular catfish fried until crispy coated with Japanese Panko and of course you cannot go wrong with our Czechoslovakian Carter sauce.

As one of the many attendance mentioned, you can never go wrong with our Texas brisket.

Next time you get a chance to see us, they highly recommend to try one of these two along with of course, pull chicken🐓 or pulled pork, both just seasoned and cooked with hickory wood, no marinade or sauce, ever.

The wedding 💒🎂was at heart of Hudson Valey.

This was full service Catering, we designed a specialty drink 🍹 for the bride, did full bar🍸, including top shelf Liquor, our barbecue menu included, pig roast🐷, and hot, smoked salmon, and of course seasonal desserts.🍰🥧🥮🧁
The event was 100% gluten-free.

We are proud to share with you a special allergy order for dessert for beautiful wedding.🤵👰🎂

Duetting couple had a extreme level of gluten-free allergies and yet they really wanted to celebrate the Hudson Valey with traditional dessert spread featuring Fall inspiration.

Our answer was honey crisp apple pie 🍏 featuring Meadowbrook farm apples🍏, peach bourbon 🍑and brown sugar pie (to some of the pies we added sweet, dry cranberries)
Chewy and Rich brownies 🍫loaded with bitter sweet dark Belgium chocolate chips.🍫

We did great,👍 not a single person got sick or uncomfortable. 🤗🫠

🔥🐷 The secret to a delicious pig roast! 🤤📢

Crispy, light brown skin and tender moist meat.

1. Use kosher salt 🧂and very generously rub the whole piglet inside and outside the skin.
Leave it overnight, to allow the salt to do it's magic.
2. Rinse thoroughly with water.💧
3. Prepare the grill.
4. Place the pig on the grill and generously rub it with Filipino White Swan Soy Sauce
5. Wrap the ears in aluminum foil.
6. Roast low and slow, keeping a close eye on the temperature and the piglet throughout the cooking process 🍽️

The moment we’ve been waiting for! 🔥

Perfectly roasted, incredibly tender, juicy, and falling right off the bone. 🐷

Sometimes, simpler is best, you will taste exactly how it should, and if you need, you can always add our local Apple 🍎sauce, freshly handmade with each Pig roast 🐷
