Being in the food industry, I’ve seen the decline in care gradually. Most businesses just look for hands instead of experience and the love for this industry. The work load has become greater, as the pay continues to decrease. I’ve asked myself, “Is being a part of this industry worth it?”.. and no matter what, my answer is yes. Regardless of the individuals that are just there for a paycheck, I will continue to lead, learn, care, love, and support everyone. Though it is absolutely draining, I just can never see myself not being the Chef that I am. A Chef that places himself as the customer. Thriving off the validation of the individuals being served. There’s no greater feeling. The table touching, the inventions, the creativity, the hunger of those looking and willing to learn and grow, the volume, the unexpected, the team building, the assessment, the problem solving, the return customers, the time to clean up and go home because it’s been a long day. I will do everything I can in my power to bring back what I miss in this industry. My heart and soul will never leave this.
