Vegetarian taco salad... Smokey & spicy roasted cauliflower, homemade guacamole, caramelized onions & sweet peppers, shredded cheddar, rainbow tortilla strips, with fresh tomato, pea shoots and purple cabbage served on a crunchy bed of romaine and spinach. So full of texture and flavor and packed with nutrition!

One of my proudest parts of this cake ended up taking a back seat but if you look closely, you can see it here. Edible shattered mirrored glass! It tasted like strawberry. 😍

I had five pesto marinated shrimp left that wouldn’t fit on the pizza, so for dinner, I made Garlic Parmesan Cauliflower Steaks and smothered them in the remaining shrimp and roasted corn.
