Bayou Smokehouse Cajun Food Truck-NOCO Authentic Cajun and Southern cuisine inspired by Southern roots, serving bold flavors in NOCO. Hey y’all!

We’re Brooke and Johnny, bringing authentic Cajun and Southern flavors from our Southern roots to Northern Colorado. We’re proud to continue Jimbeaux’s classic Cajun recipes, including gumbo, jambalaya, red beans and rice, and étouffée, while also adding our own smoked favorites like pulled pork and chicken wings

Along with our Cajun staples, we’re excited to introduce Southern classics such as collard greens and other comfort food favorites. Everything we serve is made with care and inspired by the Southern flavors we grew up on—the kind that make you feel right at home. ❤️

🐊🔥 BETTER LATE THAN NEVER… HERE’S WHERE TO FIND THE BAYOU THIS WEEKEND!

Our weekly schedule is coming to y’all a little late this week. We’ve been dealing with some truck troubles and had to wait until we knew exactly what the weekend was going to look like.

Unfortunately, that meant canceling Thursday night, but the good news is Bayou Smokehouse will be out ALL WEEKEND! 🙌🔥

🏉 SATURDAY 9/26 | Hammers Rugby Tournament | Fort Collins | 9 AM–2 PM

This one is especially close to Chef Johnny’s heart. Come spend Saturday with us and support local youth rugby!

The tournament is OPEN TO THE PUBLIC, so even if you’ve never watched a rugby match before, come on out. It’s a great chance to see the sport up close, learn a little about the game, support the local rugby community, and, of course, grab some Southern Treats & Cajun Eats while you’re there. 🐊🏉

And remember, 10% of our gross sales Saturday will be donated back to the Hammers Rugby Club. So come hungry!

Chef Johnny has been workin’ hard on a gluten-free Gator Bite that’d make a Southerner dream of home. 🐊🔥

Tender gator tail. Buttermilk marinated. Our Smokehouse Rub. Crispy gluten-free Southern dredge. Fried up golden and served with Smokehouse Remoulade.

We were fixin’ to introduce these bad boys in Berthoud this Friday, but with Berthoud Brewing starting up their own food truck, plans changed a little.

So y’all are gonna have to wait just a bit longer…

🐊 GATOR BITES ARE COMIN’!

Our next stop in Berthoud will be November 14th at , and Chef Johnny’s already cookin’ up something a little special for that day too. 👀

Trust us… it’ll be worth the wait.
