Very cold outside today ! My favorite warm me up soup is Dlish Meatball Soup
Turkey Meatballs:
1 lb of Ground Turkey
¼ cup Panko Bread Crumbs
4 tbls chopped Parsley
1 Egg
¼ cup grated Pecorino Cheese
2 tbls Garlic Powder
2 tbls Onion Powder
1 tsp Cayenne Pepper
1 tsp Kosher Salt
½ tsp Black Pepper

Combine Meatball ingredients and make mini meatballs using a small scoop to make uniform sizes. Place in refrigerator for 30 minutes to set.


Broth:
2 tbls olive oil
½ small diced Onion
3 sliced Carrots
3 sliced Celery
2 minced Garlic cloves
1 -32oz Diced Tomatoes
8 cups of low sodium Chicken Broth
1 cup Orzo
5 oz of Baby Spinach
Kosher Salt and Black Pepper to taste

Heat olive oil on medium heat and sauté Onion, Carrots, and celery for 5 minutes. Add garlic and sauté until fragrant.

Add diced tomatoes and Chicken broth to pot and bring to a boil.

Add Meatballs to stock cook for 15 minutes.

Cook orzo separately or add to uncooked orzo to pot and cook for 8 minutes until orzo is cooked.

Remove from heat and add the baby spinach.

Garnish with pecorino cheese

Having a sweet tooth problem today! Made mini baklava cups

phyllo tart shells 3 pkgs

Filling:
ground cinnamon 2 tsp
ground cloves 1/2 tsp
roasted walnuts 2 cup
roasted pistachio 1 cup
Sugar 2/3 cup
Salt 1/2 tsp
butter, melted 3 tbls

Spritz Bottle:
Water 1/4 cup
Rose water 1 tsp

Syrup Ingredients:
Honey 1 1/4 cups
Water 1 1/4 cups
Sugar 1 1/4 cups
Cinnamon stick 1 ea
Orange extract 1/2 tsp


1. Combine all syrup ingredients in a sauce pan and warm through until sugar is dissolved and set aside.
2. Toast walnuts and pistachios in the oven for 8 minutes.
3. Combine all filling ingredients in a food processor and pulse about 15 times. Do not over process.
4. Combine water and rose water in spritz bottle.
5. Place about 1 tablespoon of filling into each mini phyllo tart shells.
6. Remove cinnamon stick form Syrup and pour syrup over filled mini phyllo tart shells.
7. Let stand for at least 8 hours before eating. The longer they stand the better they taste.

Creamy "Creamless" Butternut Squash Soup

Pumpkin Seeds 1 cup - Garnish

In a small bowl, toss pumpkin seeds with oil (1 tbls), Lay on sheet tray and toast in 350F oven for 5 minutes until lightly toasted. Combine the salt (1/4 tsp), black pepper (1/4 tsp), and cayenne (1/8 tsp); sprinkle over seeds and toss to coat when they are still warm from the oven.

Soup Ingredients
Celery 2 Stalks, Medium chopped
Carrot 2 ea, Medium chopped
Onion 1 ea, Medium chopped
Olive Oil 2 tbls
Butternut Squash 1 - Peeled and cubed about 5 cups
Potatoes 3 - Peeled and cubed about 2 1/2 cups
Jalapeno 2 ea, Sliced in half with seeds and rib removed.
Vegetable Stock/broth 4.5 cups
Nutmeg 2 tsp
Salt 2 tsp
White Pepper 1 tsp

1. Sauté the celery, carrots and onions in the 2 tablespoons of olive oil (add a pinch of salt) until onions are translucent. About 10 mins on low / medium heat
2. Add butternut squash, potatoes, and jalapeno toss to coat and sauté for about 2 minutes
3. Add vegetable Stock/broth just to cover. Depending on consistency wanted you may add more stock after you puree the soup
4. Cook until all the vegetables are tender. Approx: 30 – 45 mins
Remove jalapeno pepper and puree the soup with an emersion blender
5. Add nutmeg, salt and white pepper. Taste the soup it may need additional salt and white pepper.
6. Garnish with Spiced Pumpkin Seeds and drizzle of good olive oil
