It's our (belated) Birthday! One year ago, on May 9th 2024, we decided to open Mama's Empanadas. It all started because, as transplants, we wanted a fried empanda and couldn't find it in the Mile High City, the first concept for Mama's Empanadas was born.
Over the last year, we've learned a lot and made many new friends. We are so grateful for our experiences and lessons. Looking forward to the next year as we continue to cultivate our business

We will be closed from Monday, 4/21, until 4/24. But we all know sometimes renovations don't follow the anticipated schedule. We will be reopening on Thursday, tentatively. What is yuca? Many people have asked us this question since we started in mid-2024. The answer and this post are long overdue. In short, yuca is a root starch not unlike potatoes but with a nutty flavor and denser in fiber. However, this explanation is an oversimplification of food that has connected cultures across the African, South American, and Caribbean diaspora.
Yuca, also called Cassava, was a staple in the diet of the Native Taino people of Cuba and Puerto Rico. Used in stews, boiled and dried to make into a paste to form a bread-like disk, much like tortillas. Yuca is still used to make empanadillas, pastelillos as well as other dishes like fufu prepared in West Africa.

Yuca or Cassava grows in subtropical regions around the world, including West Africa, South America, Thailand, Indonesia, and the Caribbean. The enslaved Africans learned to cultivate and prepare yuca from the indigenous Taino people. Yuca quickly became a staple in the enslaved Africans' diet as well. Likely due to its similarities and uses of crops like yams, which the Africans were already accustomed to. Today, Nigeria is the largest cultivator and distributor of yuca, more commonly known there as Cassava, in the world.
Yuca can be added to many different dishes to create filling, flavourful culinary experiences.
