Whew, Christmas caterings are done!
We cooked 8 straight days and we can’t say thank you enough to everyone who ordered food or had us cater your party. I hope everyone enjoyed the food.

I have been lucky enough to be asked to join 2 great cooks that are my good friends to be a part of an upcoming competition bbq class. This is going to be fun.

The bbq daddies are coming off 2 huge 1st place brisket calls. 1st at the American Royal Invitational and 1st at the Outlaw Roundup. These guys had a successful year in bbq. Multiple first place calls and a GC in Ardmore Oklahoma.

Coty Alambar is coming off a huge fall season where he collected multiple Gc’s, won segment 3 of the Outlaw Bounty hunt and then went on to GRAND CHAMPION the Outlaw Bounty Hunt Finale. Right now Coty is one of if not the hottest cooker in North Texas.

I had a successful year in 2024 where I collected 1 GC of a Ribcookoff event in Ryan, OK, 4 RGC’s in Outlaw bbq association, 6 1st place calls and 10 top 10 overall finishes in a total of 23 events.

We want to help grow bbq and help you get on a consistent bbq program that will produce calls and in return get you paid. This will be a hands on 100% tell all class where we talk everything bbq and answer every question you may have. We will eat everything we cook.

We also have rv electrical hookups available if you would like to stay the night and save on hotel fees.

Whoa buddy has it been a long day. Started at 3:30am. Swung by and picked up my good buddy Randy Burkhart. We headed to Woodward,Oklahoma to cook another Rib Cook Off Association event. Never cooked that far in western Oklahoma before. Holy cow does the wind blow up there! I’m glad it did because it was 108°. Wasn’t miserable due to the strong winds though. Got to set up and cook with Donny “Meat” Teel. He has a new corporate sponsor in U-Haul. Who needs a bbq trailer anyway?
The winds caused my drum to run all over the place and I fought it all freakin day. From 180° to 300° and constant ups and downs due to the extreme winds. I adjusted on the fly and had a good cook. Good but not smooth at all. Cooked 2 racks of ribs and was happy with them. Was lucky enough to hit a 2nd place. Bobby “possum” Oliver got me by 1 point for the win. Congrats buddy, you’re on a heater! Keep the train rolling. Congrats to all who got a call.

Another job done. Big thank you to Juan Sanchez for trusting us to cook for your daughter’s sweet 16 birthday party. Great venue at the Big White Barn in Decatur. We appreciate the business.

Wow, what a weekend! We catered 3 events over this busy weekend. A 50 plate volleyball party, a 50 plate graduation party and we finished up yesterday evening with a 150 plate wedding. Huge thank you to Eric and Tina for allowing us to be part of your special day. The venue in Rockwall was really cool. It was on a working ranch with a unique chapel and reception barn. I was finally able to meet Tony B with Tony B’s steak chips. These things are great! That bag didn’t last long. We are very appreciative of all of our customers and we love cooking for folks. If anyone is ever in need of catering just give us a ring. Now we rest and celebrate Memorial Day for the heroes who paid the ultimate price so we can have freedom in our great country.

Some days are just tougher than others on the cooking trail. Ventured a long 4 miles to Bridgeport to cook late Friday night after baseball. Had a super smooth cook and was happy with everything we turned in. For the first time in a long time I felt brisket was my best box and it was the only box to get a call. 6th place. Other two meats didn’t make final table. Bridgeport continues to baffle me. I’m either 1st place or nowhere to be found. Like my good friend Donny Teal says, “bad day cooking beats a great day working”.
Huge congrats to everyone that got calls. Marcus Lopez was gc and he’s on fire. Bud Brown collected his first ever RGC and that was awesome to see. Baseball season continues for us so not sure where our next cook is. See everyone down the road.

We had the pleasure of cooking for the Decatur High School baseball banquet last night. Great group of young men with great families. Hopefully that bbq can power them to another playoff win this week. Thank you to the booster club for choosing Hat Creek Q to feed everyone.

What a day in ft worth. 42 solid bbq teams battling it out in the rain and humidity. We had a smooth cook and liked all 3 boxes. Judges somewhat agreed. 3rd place ribs and a nice pay check and good for 12th overall. When a field is stacked like this, it’s very tuff to win. Congrats to everyone who got calls and a huge shout out to my buddy Tim Esh on a monster GC. What a battle between 3-4 guys. Congrats Big B on RGC.
This cookoff had its biggest numbers to date by almost double. The hosts were great and the cause was even greater. I scored an awesome new wood cutout of the Outlaw BBQ Association logo. Had a blast with everyone and we will see ya down the road.

Germanfest 2024 is in the books. Some trash talked and a great time was had. Our weekend was cut short by storms coming in Saturday night and that stinks. We got to see friends and have a cold beverage or two so it was a great weekend.
Competition bbq is crazy sometimes. I thought my chicken was good and it hit 11th. I thought my ribs were best meat of the day and they didn’t make final table. I thought brisket could have been better and wouldn’t you know it, it’s my highest finisher of the day with 3rd place. Brisket has been on the struggle bus lately for some reason so it was nice to get back in the top 3. Good enough for 10th overall. Can’t be mad with finishing in the top 12 and collecting points.
Huge congrats to my buddy Coty Alambar on GC and AJ George on rgc and to everyone that got their numbers called.
I was able to meet a lot of new cooks and I always love talking bbq and seeing their enthusiasm about competition bbq because sometimes I feel that I’ve lost that fire for it, unlike when a cook is first starting out and getting calls for the first time. It’s refreshing.

Friday night we rolled in late to Cleaburne, Texas. 35 teams in attendance chasing after $10,000 in prize money and it was a tough field of cookers. It was a little windy but the temperature was great. I thought we had a great cook, almost too smooth. The judges agreed on 2 of the 3 meats.

1st place chicken 🐔
1st place ribs 🐖
Brisket was a no show. I experimented and loved it but judges didn’t agree.
Good enough overall for Reserve Grand Champion.

Brisket has been my nemesis lately and with so many talented cooks you can’t slip up. Congrats to Stephen Peacock on GC and to everyone that got their numbers called. As always, cooking with my bbq family is what matters most to me.
I feel like I’m the luckiest guy in the world to have the bbq family I have. I can’t name you all cause it would take forever. Just know I appreciate yall a ton.

This was a first year cookoff with OBA as the sanctioning body and it was a hit. The promoter and crew hosted a great event that was packed full of stuff for the entire family. Will definitely be back. Walker, Judy, Brittany, Mark and Katrina did a great job in the judging area.

Had a great time cooking the Barnyard Cookoff in Weatherford this weekend. 120 great teams from all over, so not much room for error.
Had a great cook starting Friday night with Kayla coming out to do the grilled cheese category. It was awesome and she hit 4th place. 3 meats on Saturday went really smooth with the exception of brisket could have been a little more tender.
I was hoping the burnt ends would carry the box. Ribs were good but nothing that wowed me. Chicken was one of the best I’ve ever cooked. The judges pretty much agreed with me. These stacked field and HUGE MONEY cookoffs are fun. It’s not very often a 5th place chicken pays $1,100. Congrats to Eddie Morales and Carlos Calzada on gc and rgc as well as everyone who heard their music play. CBA events are a blast and I always enjoy cooking them.
As always, hanging out with our friends and bbq family is what it’s all about, even more than a big pay day. The food and laughter shared this weekend was good for my soul. I met new friends from Australia and New Zealand as well.
We even had Donny Teel from Sperry, Oklahoma come down and cook with us. What a blast.

Can’t forget that DJ Harley Davidson was spinning those great tunes on WADT all weekend. Everyone enjoyed the shoutouts and the music.

We want to say a huge thank you to the Aledo Blacksox for allowing us to cater their baseball fundraiser for the 2024 spring season. There are some very friendly folks in that organization and the young men were very polite. Congrats on a successful fundraiser.

A great time was had by all. It’s always an honor to be asked to cook for someone’s birthday. Last year we did 2 whole hogs and this year we did 2 stuffed gators. The meat was phenomenal. Happy 42nd birthday to Jones and we appreciate yall asking us to cook. My good friend Jason Bridgeman threw down on a shrimp
boil and also cooked some of the best shrimp scampi I’ve ever had. All around great day.
