Mini Beef Wellingtons: The Perfect Holiday Bite! 🎉🍴
These bite-sized delights are festive, elegant, and surprisingly easy to make. Whether you’re hosting a holiday gathering or just looking to impress your guests, Mini Beef Wellingtons are sure to be a hit!

Ingredients:

6-8 oz beef tenderloin fillet

3 tbsp butter

2 shallots, minced

8 oz crimini or button mushrooms

1 tsp fresh thyme (plus extra for garnish)

1/2 tbsp fresh parsley, minced

1/4 cup Cabernet Sauvignon or Sherry wine

1 pastry dough sheet (puff pastry or phyllo)

2 slices prosciutto

1 tbsp Dijon mustard

2 tbsp Gorgonzola cheese (crumbled)

2 tbsp heavy cream

1 tbsp water (for egg wash)

1 egg (for egg wash)

Salt & pepper to taste

Instructions:

Prepare the Mushroom Duxelles:
Pulse mushrooms in a food processor. Sauté minced shallots in butter until soft, then add mushrooms and thyme. Cook until the liquid evaporates. Deglaze with wine, simmer until dry. Stir in parsley, season with salt & pepper. Let cool.

Sear the Beef:
Sear the beef fillet in oil on all sides, then slice into 12 even pieces. Season with salt & pepper.

Assemble the Wellingtons:
Roll out the pastry dough and cut into 12 squares. Layer each square with prosciutto, mushroom duxelles, and a piece of beef. Brush with Dijon mustard. Roll the pastry around the beef and seal the edges.

Bake the Wellingtons:
Brush each Wellington with egg wash and make small slits on top. Chill for 10 minutes, then bake at 375°F for 12 minutes or until golden brown.

Make Gorgonzola Cream Sauce:
Blend Gorgonzola cheese, heavy cream, and water until smooth.

Serve:
Top each Wellington with a dollop of Gorgonzola sauce and garnish with fresh thyme.

1 tbsp olive oil

1 tsp paprika

½ tsp garlic powder

¼ tsp salt

¼ tsp black pepper

¼ tsp cayenne pepper (optional)

Juice of 1 lime

For the Cajun Cream Sauce:

½ cup mayonnaise

¼ cup sour cream

1 tbsp Cajun seasoning

1 tbsp lemon juice

1 tsp Worcestershire sauce

¼ tsp hot sauce (optional)

Instructions:

Marinate the Scallops:
In a bowl, mix the scallops with olive oil, paprika, garlic powder, salt, black pepper, and cayenne (if using). Toss well to coat. Let marinate for at least 30 minutes, or refrigerate for up to 24 hours for more flavor.

Sear to Perfection:
Heat a skillet over medium-high heat. Sear the scallops for 2–3 minutes on each side until they’re golden and cooked through.

Whip Up the Sauce:
In a small bowl, combine the mayonnaise, sour cream, Cajun seasoning, lemon juice, Worcestershire sauce, and hot sauce (if using). Stir until smooth and creamy.

Ingredients:

1 lb shrimp (peeled & deveined)

4 small red potatoes, quartered

2 ears corn, cut into thirds

½ lb smoked sausage, sliced

2 tbsp olive oil

1 tbsp Cajun seasoning

2 garlic cloves, minced

Salt & pepper to taste

Fresh parsley (for garnish)

Lemon wedges (for serving)

Instructions:

Preheat your oven to 400°F (200°C) or fire up your grill to medium-high.

Mix it all together in a large bowl—shrimp, potatoes, corn, sausage, olive oil, Cajun seasoning, garlic, salt, and pepper.

What You’ll Need:
– 4 salmon fillets
– 4 tbsp unsalted butter
– 4 cloves garlic, minced
– 2 tbsp honey
– 1 tbsp lime juice
– Zest of 1 lime
– Salt & pepper, to taste
– 2 tbsp chopped fresh parsley
– Lime wedges, for serving

Let’s Cook:

Season it up: Pat salmon fillets dry, then sprinkle both sides with salt and pepper.

Sear to perfection: In a skillet over medium heat, melt 2 tbsp butter. Cook salmon skin-side down for 3–4 minutes each side until golden and cooked through. Set aside.

Sauce time: In the same pan, melt remaining butter. Add garlic, honey, lime juice, and lime zest. Stir and let simmer for 1–2 minutes until slightly thickened.

Bring it back: Return salmon to the pan, spoon sauce generously over the top, and let it heat through for a minute.

A rich, creamy, and flavorful dish combining shrimp, steak, and a zesty Cajun twist!

Ingredients:
• 8 oz fettuccine pasta
• 1 lb shrimp, peeled & deveined
• 1 lb sirloin steak, sliced into strips
• 2 cups heavy cream
• 1 cup shredded Parmesan cheese
• 4 garlic cloves, minced
• 2 tbsp Cajun seasoning
• 2 tbsp olive oil
• 1 tbsp butter
• 1 cup cherry tomatoes, halved
• Fresh parsley, chopped (for garnish)
• Salt & pepper to taste

Instructions:
1️⃣ Cook the Pasta – Follow package instructions, then drain and set aside. Keep a little pasta water for later.
2️⃣ Cook the Steak – Heat olive oil in a skillet, add steak strips, season with salt and pepper, and cook for 3–4 minutes until browned. Set aside to rest.
3️⃣ Sauté Garlic – In the same skillet, melt butter, then sauté garlic for 1 minute until fragrant.

• 2 tbsp soy sauce
• 1 tsp black pepper
• 1 tbsp hot sauce (optional)
• 1 clove garlic, minced

For the Pasta:
• 8 oz spaghetti or fettuccine
• 2 tbsp butter
• 4 garlic cloves, minced
• 1 cup heavy cream
• ½ cup grated Parmesan
