Honey Cornbread Muffins
In a bowl sift together:
2 cups yellow cornmeal
2 cups AP flour
2Tbsp. baking soda
1 cup sugar
2tsp. Salt
In a second large mixing bowl add:
2 cups milk
4 LG eggs
1/2 cup melted butter
1/2 cup honey
Gently stir in dry ingredients until combined.
Do Not over mix.
Pour into 24 lined cupcake tins
Bake 350* for 15 minutes
Delicious with chili!

Several people have asked me for this lately so I will post the recipe here.
HERSHEY CANNED SYRUP BROWNIES
1 stick unsalted butter
1 cup granulated sugar
1 can Hershey's chocolate syrup
1 cup AP flour
4 LG eggs
Cream butter & sugar until smooth. Add eggs one at a time then the whole can of syrup and flour. Mix well. Pour into greased 9x9 brownie pan. Bake 350* in a preheated oven for 45min. Will look glossy on top
These are VERY moist brownies.

I will only be making 12, (9x13) pans of home made lasagna which serves about 10 people. This lasagna has ground beef, onions, mushrooms, garden tomatoes, real mozzarella & ricotta cheeses.

Its Football Season so here is a simple recipe for a great queso dip!
1lb Velveeta White Queso Blanco Cheese
2-8oz cream cheese
1 small bag frozen white corn
2 cans green chilies (heat depends on your personal taste)
2T EVOO
1lb ground white meat chicken
1 med white onion chopped
2tsp salt
1tsp white pepper
2tsp cumin
1/4c chopped green onions
Tortilla Chips

You will need a crockpot & Medium saute pan
Cube velveeta and place in crock pot with cream cheese, chiles and corn. Turn on high.
In Saute pan over med high heat, add olive oil, onions,1 tsp salt and saute until transparent. Add ground chicken, pepper, cumin, the rest of the salt. Cook until chicken is cooked through. Add to crockpot, cover and heat for 30 minutes or until all cheese is melted. Stirring occasionally. Turn to low or "keep warm" setting, top with chopped green onions and enjoy with tortilla chips!

Spinach Artichoke Dip
1- (10 ounce) box frozen chopped spinach, thawed
1- (14 ounce) can artichoke hearts, drained and roughly chopped
1- cup shredded Parmesan-Romano cheese mix
1⁄2- cup shredded mozzarella cheese
10- ounces prepared Alfredo sauce
1- teaspoon minced garlic
4- ounces softened cream cheese
pepper (optional)
Mix together in bowl, pour into an 8x8 greased pan and bake @350* for 25-30 minutes.
Tastes just like Applebees!

Here is something to warm you up. Cheaper than buying a mix!!

Bacon Cheddar Beer Bread:
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons sugar
1 1/4 cups shredded cheese (I used Cheddar, but a mixture with Monterey Jack and Colby included would be great)
12 ounces beer
4 slices bacon, cooked and chopped (1/4 c real bacon bits)
2 tablespoons butter, melted

Preheat oven to 350°.
Prepare bread pan by greasing with butter; set aside.
In a large bowl, combine flour, baking powder, salt and sugar with a whisk. Make a well in the center; add bacon, 1 cup of cheese and beer into the well
-
Stir mixture with a spoon until combined.
-
Pour mixture into prepared bread pan; top with remaining 1/4 cup cheese and drizzle with 1 tablespoon of butter.
-
Bake for 30 minutes; remove from oven and drizzle remaining butter over the top.
-
Bake for an additional 25-30 minutes or until browned on top and loaf thumps when you tap the top.

Do you have an abundance of cherry tomatoes this year? Here is a simple pasta recipe the whole family will love.
You will need:
1T. EVOO (extra virgin olive oil)
5c. Cherry Tomatoes, stems removed & washed
2 cloves garlic, minced
1/2c. onion diced
5 fresh sweet basil leaf, chopped (use very sharp knife, it bruises easily)
2-3T sugar
1t. sea salt
Heat oil in deep skillet, over med. heat saute onions till tender. Toss in tomatoes & cook until they begin to burst. Add garlic & salt. Gently smash down with potato masher or the back of a large wooden spoon. Continue to cook over low heat until it begins to reduce. Then add sugar & basil. At this point you can toss in cooked pasta of your choice. I like Penne or rotini. You can play around with this recipe by adding 1/2lb cooked sweet or spicy Italian sausage. You can also add depth to the dish by adding 1/2c red wine when you add the garlic & salt. Or 2c. sliced fresh mushrooms at this time as well.

Making Potato & Sweet Corn Chowder on this rainy day. Hand cut smoked bacon is my secret to this dish.
3 med. carrots peeled & chopped
1 med. onion chopped
2 c. hand cut smoked bacon cut into chunks (or use thick cut bacon)
4 c. yellow potatoes washed & cut into 1in. chunks
4-5 ears sweet corn (blanched & cut off cobb)
4 c. chicken broth
3 c half & half
2 T. fresh chopped chives (garnish)
sea salt & pepper
olive oil

In 4qt. stock pan, drizzle olive oil to mostly cover bottom. Add onions, carrots & bacon with a couple pinches of sea salt & fresh cracked pepper. Saute' over med. heat until veg. are tender & bacon is curled & lightly browned. Add potatoes & chicken broth, bring to boil until potatoes are tender and broth is slightly reduced. Add corn & half & half. bring back to simmer. Serve topped with fresh chopped chives.

Blueberry Lemon Bread
Ingredients
•1 (15.25 oz) white cake mix
•1 (3.4 oz) package lemon instant pudding mix
•1 cup water
•4 eggs
•½ cup vegetable oil
•1 cup fresh blueberries

Glaze:
•1 cup powdered sugar
•3-4 tablespoons lemon juice
Instructions
1.Preheat oven to 350 degrees.
2.Generously spray two 9x5" loaf pans with non-stick cooking spray.
3.In a bowl, mix together dry cake mix, dry instant pudding mix, water, eggs, and oil until completely incorporated (if using a mixer, beat on high speed for about 90 seconds).
4.Fold in blueberries, but be sure to not over mix (or else it will turn your bread gray).
5.Pour batter into prepared loaf pans and bake for 40-50 minutes or until a toothpick stuck in the middle of a loaf of bread comes out clean (mine took about 45 minutes).
6.Let bread cool in pans before removing.
7.Makes 2 loaves (about 24 servings).

Watermelon Margarita Jello Shots

1 box watermelon flavored jello
1 cup boiling water
3/4 cup white tequila
1/4 cup triple sec
10 large limes cut in half and the insides dug out.

In medium bowl, add jello mix to boiling water, stir until jello is dissolved. Stir in tequila & triple sec. Pour mixture into lime halves & chill 6-8 hours or until set firm. (I use cupcake tins to keep the limes from tipping over) Cut into wedges and serve with sea salt & lime zest mixture.
1/4 cup sea salt or kosher salt
1 Tablespoon lime zest
Mix together and sprinkle a little on jello shot before enjoying!

Honey- Molasses Chicken Drumsticks

Yield: 3 servings (2 drumsticks per serving)
Prep Time: 15 min
Cook Time: 20 min

Ingredients:
SAUCE:
1 tablespoon packed brown sugar
2 tablespoons water
2 tablespoons honey
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 tablespoon molasses
1 teaspoon minced garlic
CHICKEN:
1 teaspoon olive oil
6 chicken drumsticks, skin removed
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Directions:
1. Combine sauce ingredients in a small bowl; whisk together and set aside.
2. Heat oil in a large nonstick skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add chicken to pan, browning on all sides. Add honey mixture to pan, turning chicken to coat. Reduce heat to medium-low. Cover and cook 15 minutes or until chicken is done, turning chicken every 5 minutes. Uncover and cook an additional minute or until mixture is thick and darker color, and the chicken is well coated. Remove from heat; serve immediately, or cool before refrigerating.
