Its Football Season so here is a simple recipe for a great queso dip!
1lb Velveeta White Queso Blanco Cheese
2-8oz cream cheese
1 small bag frozen white corn
2 cans green chilies (heat depends on your personal taste)
2T EVOO
1lb ground white meat chicken
1 med white onion chopped
2tsp salt
1tsp white pepper
2tsp cumin
1/4c chopped green onions
Tortilla Chips
You will need a crockpot & Medium saute pan
Cube velveeta and place in crock pot with cream cheese, chiles and corn. Turn on high.
In Saute pan over med high heat, add olive oil, onions,1 tsp salt and saute until transparent. Add ground chicken, pepper, cumin, the rest of the salt. Cook until chicken is cooked through. Add to crockpot, cover and heat for 30 minutes or until all cheese is melted. Stirring occasionally. Turn to low or "keep warm" setting, top with chopped green onions and enjoy with tortilla chips!
