Bonal, Byrrh, Mattei, Sfumato, Braulio, Alta Verde, Montenegro, Meletti…

One year ago I found myself at the grand opening of BarChef New York.

I got to perform magic, meet Frankie Solarik and the BarChef team, and experience the kind of cocktails that made me rethink what a drink could be.

Looking back, a lot of the ideas I’m chasing today started with places like this.

Still learning. Still experimenting. Still carrying a deck of cards.

Just a little red door on a side street in Paris.

Inside was one of the most creative cocktail programs I’ve experienced—mushroom, miso, cascara, chestnut butter, calvados, fortified wines, and ingredients I’d never considered putting in a glass.

Places like this remind me how much room there still is to push cocktails forward.

Most espresso martinis treat the coffee like an ingredient checklist.

This dark roast pulped natural from La Terza Coffee in Cincinnati brought hazelnut, plum, and cacao to the glass, so I built the cocktail around those notes with Armenian brandy, crème de cacao, Frangelico, and plum bitters.

The goal isn’t just making an espresso martini.
