Shrimp, Avocado, and Grapefruit Salad

2 1/2 tbsp olive oil
12 oz. peeled & deveined shrimp
1 grapefruit, sectioned (reserve 3 tbsp juice)
2 tsp tarragon (fresh chopped)
2 tsp brown sugar
1 tsp chopped shallots
6 cups chopped romaine lettuce
1 avocado, peeled and cut into 12 wedges

1. Cook the shrimp over medium high heat in 1 1/2 tsp olive oil. Season to taste with salt and pepper.
2. Combine grapefruit juice, 2 tbsp olive oil, tarragon, brown sugar, shallots. Add salt and pepper to taste. Whisk to combine well.
3. Add lettuce to above mixture and toss. Add shrimp, avocado and grapefruit evenly to make four servings.
