Hello friends!!!! Many people have been inquiring on how the weekly meals, family meals, and chef pick meals work. Let me try to clarify a few things and explain how each one works. My permitted kitchen is shared with the public since it is based out of a union hall; therefore, I do not have complete accessibility. I have designated Tuesdays as my day in the kitchen for family meals, any catered gigs, and chef pick meals that are open to the public. On occasion, I am able to reserve the kitchen on other days as needed, and with ample notice. It's helpful if a venue has a kitchen on site for me to provide catered services. While I understand that this limits my ability to provide some services for specific dates and events, I do my best to make it happen for folks that have inquired about me catering their events!
Catering:
This service is intended to serve multiple people; generally 10+ people. There is no limit to the amount that you order, but all items are offered for either half pan or whole pan sizes. The cost of the service is based on the number of guests, the market value of the food items at the time of the inquiry, and if transport and set up/tear down, and serving is being requested. Quotes are sent out and adjustments can be made according to your budget. This is an upfront cost and is under contracted services. Services are not rendered without payment and a contract.
Personal chef meals:
These meals are provided within your home and are personalized to meet you and your family's dietary needs. This is a contracted service with a minimum of a 2 week notice of client's discontinuing of services. Clients have the option to purchase their own groceries for this service, or leave the shopping up to me! The cost of this service will be discussed based on meal expectations, location, and the number of meals per week.
Family meals:
These meals are personalized full sized meals to accommodate your family. This can be a temporary or contracted service (contracted services do require a 2 week notice of discontinuation on behalf of the client). These meals come in half pan or full pan sizes. The cost of the meals will depend on the market price for meats, dairy, produce, and the overall cost of product in order to complete each meal. These meals can be prepped for you to cook later in the week, or they can come ready to serve! An invoice is provided and payment is due upon receipt. Without payment by the requested date, the service will not be rendered.
Weekly meal prepping:
These are full meals portioned out for ready to eat individual consumption, or ready to heat meals for throughout the week. There is a MINIMUM of 4 meals with the same protein/main item and reasonable sides and veggies that are easily purchased and prepared for individual servings. For example, if you want Mac and cheese, then you will need to order a half pan. If you want burritos or tacos, etc, then you will need to order them as a family meal; unfortunately, it is not cost effective for me to just make a couple of these and a few of those. Rice, quinoa, oats, potatoes, etc are easy foods to portion for these particular meals. Let's say you want your protein to be salmon, then it is completely doable to make 2 with rice and asparagus, and 2 with sweet potatoes and black beans. Each meal that is prepped will offer no more than 3 food items (protein, starch, veggie, etc) for the most part; unless they are something like a rice bowl. An invoice is provided and payment is due upon receipt. Without payment by the requested date, the service will not be rendered.
Weekly Chef pick:
These are individual meals that are offered based on a popular demand. Because I will generally be making multiple individual meals of the same meal, it is cost effective for me to offer these to the public - not just personal chef clients. Payment is due upon ordering by the requested date. There are no invoices available for this service. If you want a receipt, then electric payment is encouraged for a digital receipt.
I'm going to be completely transparent here. As a rule of thumb, catered meals, family meals, weekly prepped meals, and chef pick meals should be cost of food and materials times 3. I have done my best to ensure that I keep my prices well under the cost of product times 2. There's been many times that I've broke even, but just as you have a family to feed, so do I.
I appreciate every single customer, and I try my best to provide delicious, quality meals without cutting corners. I don't ever want a client to feel like they can't come to me for suggestions.
