Tonight it is purple mashed potatoes!! Just some salt and pepper, fresh ground nutmeg, warmed butter and milk. Hand mashed. I'm not doing anything fancy with them tonight but picture these on a very pretty plate, next to a piece of fish plus a green vegetable or some leafy greens. Whimsical and tasty!!

I'm about to start a short series of SOUPS from around the world. So many ingredients that are native to certain areas yet readily available for our enjoyment. Some of the recipes will be simple; others more complex. So keep an eye out here for BISE (Bean's International Soup Experience). I've been working on my first to publish - Joumou (A Haitian pumpkin soup). Yum!

A typical breakfast for me. I Mix It Up!! I always use a protein of some sort (my fave is the Plexus Lean Chocolate) and coconut water then add frozen fruit. But I often add spinach, kale, etc. for extra bulk. The drink keeps me company on my commute to work (using a paper or stainless steel straw, of course!).

TIP! I buy bananas in bulk, then slice them up to freeze, so they never go bad. Makes the morning smoothie quick and chilled as I can grab a half frozen banana from the freezer. Also Grocery Outlet has amazing deals on frozen blueberries. At least HALF the cost from anywhere else (shameless plug for the locally-owned business).

Bonus TIP! Clean up is a snap. Simply give your blender a quick rinse, add warm water and a DROP ONLY of dish soap and blend to clean. Rinse and done!!!

Sharing a relatively new recipe for me. Lemon Cream Pork Chops!! It uses Creole seasoning, which you can easily make at home from other spices you may already have on hand. My attached recipe tells you how to work up a batch and store for later. Plus it's less salty than the store-bought jar version.

Simple facts! What's the difference between Creole and Cajun seasoning you ask? They are similar except Creole (city people) tends to be sweeter and mild, whereby Cajun (country folk) is spicier. Creole has a fair amount of paprika; Cajun does not.

Sometimes you just need a little diced onion. The video shows you an easy method that I use. Also, if you have extra onions – which is rare for me as I consume so much – but you don’t want them to go rotten, simply chop them up and put into little boxes to freeze. My first post on my new page!! I'm excited to see where this goes. I'm starting with a Beef Stroganoff dish that I'm creating for a meal to prepare and serve at The Shelter in Martinez on Monday. We'll add a Caesar salad and biscuits on the side. Thank you to my friend, Lori Harness, for the meal suggestion.
Going to start with warming some beef broth with carrot, thyme and bay leaf. I will braise the roast meat and add a new twist - Cognac!! Then add onion and the broth before cooking for a few hours. Once the meat is cooked, I'll add in that sour cream along with some mustard and parsley. I'll saute some mushrooms, probably a variety, to serve on top. Then it all goes on top freshly cooked wide egg noodles. I think the residents of the shelter will really enjoy!
