We smoke it in an old school cast iron smoker. It's so good that most of our patrons do not use sauce.

Did a wedding Sunday. It was so good I felt compelled to make more bbq this weekend. Gonna practice Mac n cheese and adding baked beans to the menu also. Let me know if your interested.
