The "Sonny Smother" is on the menu this week! Either a hamburger steak or grilled chicken breast smothered in grilled onions, peppers and mushrooms. Served with corn, green beans and a roll.

Employee Spotlight: Tim Whitehead

Born and raised in Columbia, Tim has spent nearly his entire life here. His connection to the course goes all the way back to his younger years, when he played here while it was still known as Bigby Hollow Golf Course. Later, when the course became Stoneybrook, Tim spent about five years working here.

After retiring from Farm Bureau Insurance Company, Tim was looking for something to keep him busy and Pillow Springs felt like the perfect fit. He’s now been part of the Pillow Springs team for two years!

Golf and Pillow Springs are a family affair, too. Tim is the proud father of his son, John, a senior at UT Knoxville, who also worked at Pillow Springs this past summer.

We’re thankful to have Tim as part of the Pillow Springs family. Next time you see him around the course, be sure to say hello!

Member Spotlight: Pete Coggin

Pete officially became a member in February, but his history with the course goes back much further. A Columbia native, Pete has been playing here since he was in high school, including back when the course was known as Stoneybrook.

When asked to choose his favorite hole, Pete admitted it wasn’t an easy decision, but ultimately landed on No. 15. He’s had some memorable moments there, including chipping in several times, which certainly helps make it a favorite!

For Pete, some of his best memories at Pillow Springs aren’t about a particular score. He especially enjoys Thirsty Thursdays and the opportunity to come out, play some golf, socialize, and spend time with others around the course. It’s that combination of golf and community that keeps him coming back.

As for his favorite course he’s ever played, Pete chose Regatta Bay Golf & Yacht Club in Destin, Florida. He’s played several courses in the Destin area, but Regatta Bay stands out as his favorite, with its beautiful layout, abundant water and bunkers, and memorable overall experience.

We’re glad to have Pete as part of the Pillow Springs family and look forward to seeing him around the course for many rounds and hopefully a few more chip-ins on No. 15!
