It makes us sad to say that We're going to take a small break from the food truck.
We're going to complete a couple of fabrication contracts out of town, replenish our finances and try to come back better 🫶
When we started the food truck, we decided to 'just start'
Knowing that everything wasn't perfect but we figured we would do small repairs and upgrades along the way during our 'down time'
Truth be told, we rarely have 'down time'. Derek gets up around 5 am to start his day on the food truck, I get up around 6:30, by the time we get done serving, 2:30 ish, we come home, finish cleaning the trailer and we have a normal evening of supper, baths, bed. On our 'off days', we're getting groceries and preparing for the next work day or simply trying to rest & spent time with our babies. There hasn't been time to do these upgrades/ repairs needed that we thought we would do along the way. We're doing this entire journey ourselves. We've learned ALOT & we now know what we need to do to be efficient & give better service.
When we started, we started with one Fryer, we now have two. We still need to install an extra water reservoir, an extra gray water, swap our 6 burner stove to a 4 burner, and make money in the process.
We have been through the ringer with Employees, although some being hard workers & having good work ethic, we've struggled with them calling in before major events, (putting us in a serious bind and causing us to give less than good service) trying to give stipulations or make their own hours (will work m-f but not a Saturday or sunday)
So until we get these hiccups figured out, we will be closing down minus a few events we already have booked. We thank every one of you for your business & support and we will see y'all soon! 🫶💔❤️

Going to close down between 2:30 and 4:30 ish so we can clean & prepare for the evening shift for cruise night!! See yall there! 🥳🫶

How do we?!
So!! I've had several people ask..
How do you keep your soups to temp?! How do you know it's safe?!
Well, we have a steam table! This is it and ive added text so you can see how its usually set up!
Etouffee is ALWAYS in the very front with a red handle ladle so there's ALMOST no possibility of contamination in other food. Behind it is usually red beans and in the very back is usually our gravy for Biscuits (even though it says Gumbo) we keep our cheese for our fries on here and sometimes Elote 😋 This is also where we season our fries 🤤. The thermometer on the wall gives us a constant reading to ensure that your food is to the proper temp at all times!!!

We are getting so much better getting food out in time, learning our warmer and spacing orders!!! The last month taught us ALOT!!! Come see us!

We are setting up in Stockton at The Darkside of Paper Moon Tattoo Studio today! Staying until about 4 or 5! 🥰🫶
