It is finally feeling like Fall here in Texas, which means it's time for some soup! π
Hereβs a hearty Taco Soup recipe thatβs perfect for game days, fall evenings, or a quick weeknight meal featuring your 5-C Smokehouse seasoning! π
Serves: 6β8
Prep Time: 10 minutes
Cook Time: 30 minutes
Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 medium onion, diced
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) diced tomatoes (fire-roasted adds great flavor)
- 1 can (10 oz) Rotel (diced tomatoes with green chilies)
- 2 cups beef broth (or more for thinner soup)
- 2 tbsp 5-C Smokehouse All-Purpose Seasoning.(or mix All-Purpose + Chicken Seasoning for depth)*
- 2 tbsp 5-C Smokehouse Pinto Bean Seasoning
- 1 tsp chili powder (optional for heat)
- 1 tbsp olive oil or butter
Instructions:
1. Brown the Meat:
In a large pot, heat olive oil over medium heat. Add ground beef and diced onion. Cook until meat is browned and onions are soft. Drain excess grease.
2. Season It Up:
Stir in **5-C Smokehouse All-Purpose Seasoning** (and chili powder or taco seasoning if using). Let it cook for 1β2 minutes to bloom the spices.
3. Add the Good Stuff:
Pour in the corn, beans, diced tomatoes, Rotel, and beef broth. Stir well to combine.
4. Simmer:
Bring to a boil, then reduce heat and simmer uncovered for 20β25 minutes, stirring occasionally.
5. Adjust & Taste:
Add more 5-C seasoning or broth as needed depending on your taste and desired thickness.
Topping Ideas:
- Shredded cheese
- Sour cream
- Diced avocado
- Chopped cilantro
- Crushed tortilla chips
- Lime wedges
Slow Cooker Version:
Add all ingredients (except toppings) to a slow cooker and cook on low 6β8 hours or High 3β4 hours.
