I gotta admit when I am tired I am a sucker for rice a roni. Cheesy broccoli, added some fresh broccoli, cooked up some pork country ground sausage, used heavy cream instead of milk, and a little bit of shredded cheese. It smelled so good that I burnt my tongue lol.

Comfort food this morning in the form of soft scrambled cheesy eggs and ham. Farm fresh eggs, some heavy cream, lots of pepper, and of course, salt. Whisk your eggs and let them sit for about 15 minutes before cooking. Letting them sit with salt during that time allows the salt to loosen up the protien network so when heat is applied you have softer, more tender egg curds. Give it a try!

So I'm headed back to work next Monday and thought that I would spend some time making food that I want before the madness starts. I made some fresh kimchi with Korean chives and gimbap. Please do not confuse gimbap with sushi they are completely different. The gimbap also usually has carrots in it but....I forgot to add them in.

I had meant to post this a few days back. I found these really cool mushrooms at the Asian market and decided to take what I had in my kitchen and make hot and sour soup. It was awesome. If you like spicy food you really need to try and find this Swanson spicy chicken broth.

Pan Asian Supermarket! So much variety I wasn't able to snap a whole bunch of photos it would have been way to many to post. Came home with so much stuff that I am going to be trying out some really cool things. While I have to say that HMart is still my very favorite mega Asian supermarket this one is closer to me so I can get my fix.

I've been cooped up in my house for the past few days so I thought that I would treat myself and head to Antioch, TN. today and check out the new Pan Asian Supermarket that just opened up a few months ago (pictures to follow when I get back). For breakfast today I have been craving bibimbap but am to lazy to make it the traditional way so I just cooked all my veggies together, hot white rice, fried egg, and bibim sauce. Let's just say I am fueled for my day trip!

I was recently asked if I only cook Korean food. Actually I have had the pleasure of meeting people from all over the world and cooking with them. Seafood orzo risotto is a very easy dish and wonderfully tasty. I love this seafood package from Costco as it comes with premimum red Argentinian shrimp and bay scallops complete with compound butter. This dish will serve two easily and cost under $5 per person to make.

So it's been a couple of months and work has kept me traveling and busy. I have decided to leave that line of work and look for something a bit more stable with less traveling.

Which means for now yours truly is again unemployed with time on my hands to cook. I was thinking of cooking and selling food for the time being at the local farmer's market here as we have a large mixture of people from different backgrounds being that we have TTU in our backyard, what do you think?

I've been running around for 6 months straight and my body and mind are tired and hungry. Lately I really have been craving comfort food and this chicken jook (Korean rice porridge) is the perfect meal. Great too if you are feeling under the weather.

Today is my last day before I head back out to work in Gallatin for the week. Really wanted something comforting to eat and Japanese spicy broiled eggplant and butter fried king oyster mushrooms are one of my favorite things to cook when I want to attempt to be healthy. Gochugang minced pork with multigrain rice and a perfect fried egg to round things out.

Oh home cooking I'll be back at the end of the week 🤤🤤
