This is what a client had to say when I asked her for feedback about the roast. “When I took my first bite (and every one after that too) it tastes like « home » but better. I don’t know how else to describe it. The mix of stuffing is so damn flavorful, I toss it around my mouth and try to figure out what spices were used! All together in the roast, it is just heavenly! I’m never going back to a tofurkey again! For real! Knowing your roast is out there, I will never eat one again! All the flavors of home and every Thanksgiving I want to attend is how I would describe your roast! It was so juicy, flavorful, and that « yuba » or whatever almost had a noodle like texture that was so great together, and then the mushrooms....day-um! I want one for Christmas too please! “ and she will def be getting one for Christmas. What is yuba? Layer and layers of dried bean curd sheets (aka tofu skins) marinated with a tamari ( spice and brown sugar marinade then filled with shiitake mushrooms, jackfruit, and mirepoix, (carrots, celery, and onions). And then we’ve added some pistachios for some Smokey nutty contrast. Then tressed and steamed for the layers to fuse together. Finally basted with more marinade and roasted until crispy on the outside. Served with a mushroom gravy. And it’s waiting for you to preorder for pick up at in Chino on Thanksgiving morning 10–1pm.
