We sold a ridiculous amount of those cookies last week, so we doubled down this week!

We have a hard time keeping our big mouths shut, so I guess we will just out it.

We are presently trialing beef tallow in 1 fryer this week. Man are the fries and chicken sandos incredible!

Since it's unofficial still, just ask for yours to be fried in tallow. We will try to accommodate!

We are selling our food trailer. If you or anyone you know wants it, please put them in touch with us!

Selling our 8x16 food trailer.

Trailer is about 4 years old. Was our workhorse for high traffic events and many high volume breweries.

We emptied out the stuff that we needed for our restaurant and left the rest. If you need anything in particular, we may have it. Just ask.

Alright, so here is the latest conundrum.

YES, we know that you all want Birria back. Frankly, to switch gears from our day to day operations/menu would be a very large undertaking and be very disruptive to business. It would likely alienate our new customer base (Many new customers have no idea of our past birria shenanigans).

The volume, workflow and free space needed would likely break us... It would make it near impossible to serve our regular menu at the volume/demand that we are hitting presently. It's a good problem to have for such a brand new restaurant to have such a high demand lunch and dinner service, so not complaining there!

So here we are, asking ourselves if its worth it? Is it worth the clear and apparent business disruption, bad reviews from customers that don't understand what is happening (And yes its a real issue. If our reviews drop, our business is affected negatively), is it worth the stress of trying to pull it off?

While we strongly believe that we have the best birria around (No ego here. We just know our product!), it's such a tough issue to tackle!

So we need to ask ourselves. Do we really have enough of a regular base to do a "Birria day" that is not advertised on google and not part of our scheduled open hours? No burgers. No philly's. Just straight birria!

If only there was a day that we are not advertised as open. Like a Tuesday or something....Sigh....Maybe.....

Tons of positive feedback on the patty melt yesterday! It really is such a great pairing between CastleDough and Stack'd!

This one is a blast from the past. Nothing but high quality ingredients and an overwhelming desire to always put out our best product. The only thing that could compliment this simple classic is CastleDough Sourdough. The best bread you can get anywhere!

We have a limited supply, but we will continue to run this special until the bread runs out. Grab yours while its still around!

So we received a small delivery of the best bread ever. Naturally we decided to turn them into patty melts.

Worlds best Sourdough toasted with a little butter, 2 of our delicious patties topped with sharp cheddar and white American cheese. Nestled up with a little mayo and caramelized onions.

I know what I ate for lunch already. How about you?

Kind of funny, but we have had a "rewards" program forever. It's a basic, built in program that rewards 5% off sales once you redeem 50 points. A sort of a frequent flyer reward. But since we were a food truck, it was not really used much.

Lately, we have noticed quite a few regulars that use our clover store to order have been redeeming rewards frequently! Congrats to you all. You now know more about it than us :)

So in an effort to not look dumb when customers ask, here is some information for both of us.

If you don't want to install another app on your phone, you can just ask for a receipt in-store:

Locate the 3-word code at the bottom of your receipt.
Text the code to 73752. After you earn enough points for a reward, you’ll get a QR code a cashier can scan when you check out at the register.
Collect your reward and you’re good to go.

So for the 300+ of you that have redeemed points with us so far. How have you been doing it?

And yes, someday we will implement a full fledged system that we actually understand :)

Our supplier sent us too many Avocados by accident, so let's make the best out of it!
