Also exciting news since I last posted!!! I have teamed up with an amazing and passionate baker who offers options most weeks to nurious your sweet tooth; Kathleen with Creekside Bakery. I wish I had more pictures of her tasty treats but we tend to eat them before any pictures can be taken!

Menu for 8/9/2015 Delivery

Thai Chicken Soup: Lemongrass, ginger and shallot infused chicken stock, bok choy, scallions, chicken breasts and rice noodles basil & mint $30

Pesto Pasta with your choice of Chicken, Shrimp or Chicken and Shrimp, baby spinach, tomatoes in a light creamy pesto sauce (Risotto or Gluten Free Pasta upon Request) – Chicken, Shrimp or Chicken and Shrimp are sautéed in garlic and then tossed with fettuccini pasta and fresh grape tomatoes and baby spinach in a light creamy pesto sauce. Chicken $36 Chicken and Shrimp $38 Shrimp $40

Carne Asada – Flank steak is marinated in a blend of garlic, cilantro, lime, chili powder, cumin, oregano, chipotle chili and Gluten Free beer, then grilled to medium rare. Served fresh limes wedges, dice red onions and tortillas and salsa roja (cast iron roasted tomatoes, jalapenos, garlic and onions) $29

Chicken Enchiladas – Chicken is slow cooked in secret Mexican spices and Mexican Beer, then rolled in 1/2 flour 1/2 corn tortillas and topped with homemade enchilada sauce $28

Pork Carnitas – Pork is seasoned with cumin and adobe seasoning, seared then slow cooked and served with a homemade roasted tomatillo salsa (tomatillos, garlic, jalapenos, cilantro & lime) $29

Salads:
Grilled Chicken Salad w/Radishes, Cucumbers and Tarragon Pesto – Mixed baby greens topped with radishes, cucumbers, chicken breasts, pine nuts and a fresh tarragon pesto & grilled sourdough croutons (clients request)
Roasted Asparagus, Grape Tomatoes & Shallot Pasta Salad – veggies are roasted and tossed with pasta, garlic, olive oil and feta cheese

Soup:
Roasted Tomato Basil Soup – Tomatoes are roasted then pureed with simmering chicken stock, basil and thyme with a hint of crushed red pepper (can be eaten hot or cold)

Meals:
Slow Cooked Pork Carnita w/Roasted Tomatillo Salsa, Mexican rice & tomato, cucumber cilantro salad – pork is slowly cooked with garlic, chipotle peppers and shredded. Served with tortillas, Mexican rice and a fresh tomato and cucumber salad

Chicken & Asparagus w/spinach, basil and Feta Orzo – Chicken & Asparagus is pan seared and simmered in a lemony pan sauce, served with spinach, basil and feta orzo

Grilled Jerk Chicken Breasts, Grilled Zucchini and Allspice Rice Pilaf – Let me know how spicy you would like it! It is a new Jerk recipe that I am trying, chicken breast are marinated in a homemade Jerk Seasoning then grilled, served with grilled zucchini and rice pilaf that has a hint of allspice

Slow Cooked Pork n’ Beans & Cucumber-Dill Salad– Pork tenderloin and pinto beans are slow cooked with green peppers, onions, garlic, jalapeno’s and tomatoes. Served with a fresh cucumber-dill salad

Spinach & Mushroom Stuffed Flank Steak w/ Roasted Mushroom Quinoa – Flank steak is seasoned and then rolled stuffed with fresh spinach, garlic and mushrooms served with a roasted cremini mushroom quinoa

Salads:
Romaine & Radicchio w/blue cheese, walnuts, dried cranberries (or dried cherries…or both), grilled beets, served with a white balsamic dressing

Nectarine & Prosciutto Salad – Arugula is topped with sliced nectarines, thin slices of prosciutto and parmesan cheese, served with a honey-Dijon shallot dressing

Soups:
Mexican Chicken & Rice – carrots, celery and onions are sautéed in Mexican spices, then w/chicken, black beans and rice are simmered with tomato & green chilies and chicken broth

She-Crab Soup – a creamy soup with fresh lump crabmeat (has a hint of dry sherry and mace)

Meals:
Shrimp Puttanesca & Parmesan-Rosemary Polenta: Shrimp is sautéed and simmered in a fresh tomato, garlic, onion, Kalamata Olive and Caper sauce, served with a creamy parmesan & rosemary polenta.

GRILLED Paella & Tomato Salad: (I saw this in a magazine and have to try it!!!) Spanish rice, shrimp (can be made w/out shrimp), chicken thighs, chorizo, green olives, roasted red peppers, smoked paprika are cooked over a hot grill. Yellow and Red grape/cherry tomatoes are mixed with creamy buttermilk and herb dressing

Korean-Spiced Pork Chops, Asian Slaw, Grilled Potato Salad w/Dijon-Bacon-Scallion Vinaigrette: Pork Chops are seasoned with some classic Korean flavors and grilled, served with an Asian slaw consisting of Napa cabbage, radishes and scallions in a light rice vinegar sauce, Red & Sweet Potatoes are seasoned and then grilled and then tossed in a bacon, Dijon, scallion vinaigrette.

Ground Beef Taco Mac N’ Cheese w/Watermelon & Mint Salad (this one’s for the kids & this is one of my kids favorites): Lean ground beef (ground turkey can be substituted) is browned and seasoned with my homemade taco seasoning, mixed with tomatoes and mild green chilies, pasta and grated cheese. Watermelon is diced and tossed with chopped mint.

Chicken & Peanut Stir-Fry w/Basmati Rice: Chicken Breasts are stir-fried with garlic and ginger, scallions, jalapeno pepper, Napa cabbage and peanuts in a light sauce. Served with Bastmati Rice.

Salads:
Red Romaine & Mixed Green Salad: with oranges, grapefruit, red peppers & pistachios served with a pistachio-citrus vinaigrette (can be made without nuts)
Fruits & Nuts Salad: mix of endive, romaine, radicchio lettuces topped with blueberries, apples, walnuts and parmesan cheese, served with a balsamic vinaigrette (can be made without nuts)

Soups:
Thai Chicken Soup – Chicken Broth is flavored with lemongrass and ginger, and is full of chicken, bok choy and brown rice noodles, basil and cilantro (NO COCONUT MILK)
Bean & Pasta Soup – onions, carrots, celery, kidney beans and pasta are simmered in beef broth that has a hint of pancetta

Main Meals:
Tuscan Chicken, Wild Mushroom Risotto and sautéed Green Beans – Chicken is browned and then simmered in a white wine, rosemary sauce, served with creamy wild mushroom risotto and green beans that are sautéed with a hint of garlic

Chili Verde, Black Beans and Rice, Roasted Tomatillo Salad and a Fresh tomato, cucumber, red onion and cilantro salad – pork is slow cooked in a classic Mexican Verde sauce, served with black beans & rice, and roasted tomatillo salsa and a fresh veggie salad of tomatoes, cucumbers, red onions with a light cilantro dressing

Tex-Mex Chicken and Rice – chicken breasts are sautéed in “Tex-Mex” type spices and then simmered with tomatoes, peppers, black olives, cheddar cheese and rice.

Stuffed Poblano Peppers w/a Red Chili Sauce, Watermelon Salad w/Feta & Mint – poblano peppers are stuffed with a mixture of ground beef, rice and corn and then topped with a homemade 3 chili sauce (similar to enchilada sauce but a bit more complex), served with a watermelon, feta and mint salad

Fresh Coriander Chicken, Herbed Whipped Mashed Potatoes and steamed Broccoli w/Red Peppers – Chicken is cubed and then sautéed until brown, then simmered in a crème fraiche and coriander sauce. Served with creamy whipped potatoes and steamed broccoli w/red bell peppers and a hint of garlic

Beef Stroganoff, served with herb buttered egg noodles and gingered carrots – Rib eye steak is sautéed with mushrooms and finished in a sour cream sauce, served with buttered egg noodles and gingered carrots

Junes Appetizer Menu:

Soups:
Cheddar & Cauliflower Soup: This soup has a great creamy texture but no cream is used! Onions, butter, cauliflower, chicken stock, sharp white cheddar and a hint of cayenne make up this yummy soup.

Baby Carrot & Fennel Soup: a creamy soup full of flavor! Spring onions, carrots, fennel and potatoes are seasoned with cumin cooked and then pureed with hint of cream.

Appetizers:
Leek & Cheddar Dip w/Rye toast: sautéed leeks are mixed with a dark stout and cheeses

Chicken Spring Rolls: Brown rice, grilled chicken, red cabbage, mango, cilantro are wrapped in light rice spring roll wrappers and served with a lime-soy dipping sauce

Stuffed Portobello Caps: Portobello mushrooms are stuffed with chicken, red onion, bread crumbs, herbs and parmesan cheese

Pork Carnita Empanadas: pie like dough is stuffed with pork carnita meat, quesadilla cheese, and red onions and is served with a roasted tomatillo salsa

Mini Jerk Chicken Bites: Chicken Breasts are marinated and grilled in a homemade jerk sauce

Stuffed Mini Bell Peppers: Sweet peppers are stuffed with creamy cheese, shallots, green onions, cilantro with a hint of lime

Yakitori Salmon Bok Choy Skewers: Salmon and Bok Choy are marinated in a semi sweet soy marinate then grilled

Salads:
White Bean and Veggie Quinoa Tabbouleh: Quinoa is mixed with fresh peppers, spinach, parsley, mint, tomatoes, cannellini beans, onion and fresh lemon juice. $12
Thai Chicken Salad: Chicken is grilled and served on a bed of savoy & red cabbages, bean sprouts, carrots and fresh herbs and served with a soy-lime dressing (I use Gluten Free Soy Sauce). $18

Soups:
White Bean Minestrone: full of veggies (carrots, celery, leeks, zucchini and kale) in a homemade chicken stock with cannellini beans and tiny pasta (can be made w/out pasta or with Gluten Fee Pasta) (can also be made vegetarian).

Chicken Gumbo: a healthy take on a classic chicken gumbo, full of tomatoes, okra, onions, garlic, kale, corn, herbs, brown rice and chicken. It’s not just a soup it is a full meal in a bowl.

Meals:
Roasted Salmon & Cherry Tomatoes, Goat Cheese and Caramelized Onion Polenta: Salmon is seared with a hint of fennel and then roasted with cherry tomatoes. Served with creamy goat cheese polenta that is topped with caramelized onions.

Grilled Chicken Breasts (boneless/skinless) with a Cucumber-Peach Salsa, Rice Pilaf and steamed broccoli: Lean chicken breasts are grilled and served with a cucumber, peach and red onion salsa. Served with a homemade seasoned rice pilaf and healthy steamed broccoli.

Chicken, Mushrooms and Tomato Pasta: Pasta is tossed with sautéed chicken breasts, cremini mushrooms, herbs, garlic in a creamy Greek yogurt based sauce and cherry tomatoes. (can be made with Gluten Free Pasta)

Gemelli Pasta w/Cauliflower, Bacon, Chickpeas and Sage: Pasta is tossed with sautéed bacon, chickpeas, cauliflower, garlic and onions (can be made with a Gluten Free pasta).

Roasted Pork Tenderloin with Baked Apples and Maple Caramelized Onions, Corn Bread Stuffing, Zucchini & Summer Squash Sautee: Pork tenderloin is roasted with apples and a hint of maple syrup, served with a homemade cornbread stuffing that has onions and crisp apples, sage and fresh Italian sausage and sautéed farm fresh zucchini and summer squash (corn bread stuffing can be made with gluten free corn bread)

Grilled Flank Steak w/ Sautéed Wild Mushrooms and Herbed Couscous: Flank steak is grilled and served with sautéed wild mushrooms and couscous that is flavored with fresh herbs (Quinoa can be used as a Gluten Free Starch in replacement of the couscous)

Mixed greens Salad w/Fresh Peaches, Carrots and Cucumbers with a Homemade Balsamic Vinaigrette
Herby Cucumber Salad – Long ribbons of English Cucumbers are mixed with red onions and served with romaine lettuce, with a Dijon-Greek yogurt herb dressing.

Soups:
Roasted Tomato Basil Soup – Plum tomatoes are roasted and then pureed with homemade chicken stock, garlic, thyme and basil

Spring Onion Soup – caramelized local spring onions in a rich beef broth. Served with homemade croutons

Meals:
Rolled Mustard Greens-Flank Steak, Roasted Fingerling Potatoes & Pesto Snap Peas – Mustard greens are sautéed in garlic, and then rolled into a lean flank steak. Served with thyme and garlic roasted fingerling potatoes, and crisp snap peas that are seasoned with a basil pesto.

Honey Cashew Chicken w/Jasmine or Brown Rice – Chicken is stir-fried with broccoli, edamame, peppers and onions in a soy and honey sauce and topped with cashews.

Shrimp Florentine Pasta – Fettuccine is tossed with sautéed shrimp (can be made w/chicken) spinach, garlic and lemon (can be made with Gluten Free Pasta)

Roasted Kalua Pork w/Apple Fennel Slaw and Cornbread (can make gluten free cornbread) – Pork is slow roasted and has a great smoky flavor. Served with a fresh crisp sweet and tangy slaw and cornbread

Curried Chicken w/Chickpeas & Zucchini Served with Brown or White Rice and a Mango & Pineapple Fruit Salad – mix of chicken, garlic, chickpeas, zucchini, red curry and fresh cilantro served over your choice of brown or white card

BBQ Chicken Breasts (thighs & drumsticks are available), Grilled Veggie Pasta salad & Herbed Bean Salad – Chicken is marinated in a vinegar based “BBQ” sauce, and then grilled. Served with a grilled veggie pasta salad (zucchini, summer squash, eggplant & peppers) which is tossed with a light dressing and parmesan cheese and an herbed bean salad that consists of cherry tomatoes, cucumbers, cannellini beans, parsley and lemon. (Pasta salad can be made with Gluten Free Pasta)
