Next Week's Menu's (6/4-6/10)
Salads:
Red Romaine & Mixed Green Salad: with oranges, grapefruit, red peppers & pistachios served with a pistachio-citrus vinaigrette (can be made without nuts)
Fruits & Nuts Salad: mix of endive, romaine, radicchio lettuces topped with blueberries, apples, walnuts and parmesan cheese, served with a balsamic vinaigrette (can be made without nuts)
Soups:
Thai Chicken Soup – Chicken Broth is flavored with lemongrass and ginger, and is full of chicken, bok choy and brown rice noodles, basil and cilantro (NO COCONUT MILK)
Bean & Pasta Soup – onions, carrots, celery, kidney beans and pasta are simmered in beef broth that has a hint of pancetta
Main Meals:
Tuscan Chicken, Wild Mushroom Risotto and sautéed Green Beans – Chicken is browned and then simmered in a white wine, rosemary sauce, served with creamy wild mushroom risotto and green beans that are sautéed with a hint of garlic
Chili Verde, Black Beans and Rice, Roasted Tomatillo Salad and a Fresh tomato, cucumber, red onion and cilantro salad – pork is slow cooked in a classic Mexican Verde sauce, served with black beans & rice, and roasted tomatillo salsa and a fresh veggie salad of tomatoes, cucumbers, red onions with a light cilantro dressing
Tex-Mex Chicken and Rice – chicken breasts are sautéed in “Tex-Mex” type spices and then simmered with tomatoes, peppers, black olives, cheddar cheese and rice.
Stuffed Poblano Peppers w/a Red Chili Sauce, Watermelon Salad w/Feta & Mint – poblano peppers are stuffed with a mixture of ground beef, rice and corn and then topped with a homemade 3 chili sauce (similar to enchilada sauce but a bit more complex), served with a watermelon, feta and mint salad
Fresh Coriander Chicken, Herbed Whipped Mashed Potatoes and steamed Broccoli w/Red Peppers – Chicken is cubed and then sautéed until brown, then simmered in a crème fraiche and coriander sauce. Served with creamy whipped potatoes and steamed broccoli w/red bell peppers and a hint of garlic
Beef Stroganoff, served with herb buttered egg noodles and gingered carrots – Rib eye steak is sautéed with mushrooms and finished in a sour cream sauce, served with buttered egg noodles and gingered carrots
