"Hi everyone! My name is Monica, but you can call me Mo, or Momo. I started working in kitchens when I was 16, and it didn’t take long before I was hooked. There’s something special about the art of flavor — the creativity, the energy, and the way simple ingredients can come together to create something unforgettable. By 17, I was already managing, and I haven’t looked back since.
Over the past 17 years, I’ve worked in just about every corner of the service industry — cooking, waitressing, bartending, managing, food trucks… you name it, I’ve done it. Those experiences didn’t just teach me how to run a kitchen — they taught me how to read a room, connect with people, and create an atmosphere where everyone feels like they belong.
What has always drawn me back is the community. Food isn’t just about what’s on the plate — it’s about the experience, the conversations shared over a meal, the laughter, the traditions, and the relationships that grow from it. That sense of connection continues to drive everything I do.
Outside of the kitchen, I’m an artist, avid camper, and animal lover. I’m consistently working on section-hiking the Appalachian Trail and embrace a free-spirited lifestyle that keeps me moving, exploring, and seeking new experiences.
This combination of passions — traveling, cooking, and creating memories on the road — has allowed me to accomplish my dream: bringing people together through food, wherever the journey takes me.
More than just serving great meals, my goal is to create moments and connections that last. I want every plate to be more than food — I want it to be an experience, a memory, and a reason for people to come together and celebrate life."
