Pictures of a chuck roll, prepared for burnt ends or shredded beef, undergo an overnight rest in the smoker to 160, wrapped in peach paper, removed at 190, followed by a 40-minute to an hour rest, then cut into squares or shredded, reserved for later, rewrapped in the same peach paper, placed in an aluminum tray,freeze or keep in refrigerator for up to3 days just thaw and he up and serve

The cruck rolls have been cooking for roughly 6 hours and are now ready to be wrapped. Similarly, the pork butt has cooked for 4 hours and will also be wrapped. For the ribs, I will add a glaze made from butter, Dijon mustard, and maple syrup, followed by a light wrap, and they will be done in about 45 minutes. When I take out the beef and pork time will tell

This morning began with an early start as chuck rolls were placed in the smoker to make burnt ends, Will stop for a cup of coffee before I prep the pork butts and ribs, going to be a long day checking on the fire every half hour for the next 10 to 12 hours
