Apollo French Toast
Ingredients
8 slices white bread
4 lg eggs
1 cup heavy whipping cream
syrup
powdered sugar

Directions
1 Crack eggs in large bowl, add cream, and whisk.
2 Dip bread in mixture to coat both sides and place in full
pan.
3 Place pan in smoker preheated to 250F. Flip after 30min
then again after 15 min. Pull after 10 more min.
4 When serving cover w/ syrup and sugar.

Ingredients
4-5 lg potatoes (cubed med)
2 # gorgonzola cheese (crumpled)
1 # mozzerella cheese (grated)
1 # cheddar cheese (grated)
1 pt heavy whipping cream
1/2 sweet onion (diced fine)

Directions
1 In lg pot filled w/ H2O, place potatoes and bring to boil.
Boil 10 min..
2 Place 1/2 cheese in bottom of 1/2 pan. Add potatoes and
onions then place rest of cheese on top.
3 Place pan in warmer of preheated smoker for 3 hr. (in
main chamber for 1hr if no warmer on smoker)

Ingredients
1 # mozzarella cheese (grated)
1 # cheddar cheese (grated)
2 # gorganzola cheese (crumbled)
1 # macaroni noodles
1 pt. heavy whipping cream

Directions
1 Bring lg. pot of H20 to boil. Add noodles and boil 20 min.
Drain in collanander.
2 Add 1/2 cheese to bottom of 1/2 pan. Add noddles. Add
rest of cheese than pour in cream.
3 Place pan into warmer of preheated smoker. Smoke for 3
hr. (if you don't have a warmer you can place in main
chamber and smoke for 45 min. to 1 hr..

Lugh shrimp scampi
Ingredients
2 sticks unsalted butter
7 Tbs minced garlic
1 pt heavy whipping cream
2 Tbs flour
2 # shrimp (no shell or tail)
1 # linguine

Instructions
1 Melt butter in lg deep skillet. Add garlic and shrimp and
cook on med-high heat till shrimp turn red
2 Add cream and flour and turn heat to high. Pull when
sauce starts to thicken.
3 Bring H2O to boil in lg pot. Add noodles and boil for 13
min. Transfer to collander and rinse w/ cold H2O.

Directions

2 # Groganzola cheese (crumbled)
1 # Cheddar cheese (grated)
1 # Gouda cheese (grated)
1 pt heavy whipping cream
broccoli florets
1/2 sweet onion (diced med.)

Directions
1 Place 1/2 of cheese in bottom of 1/2 pan. Break up
florets into smaller size and make 2 layers. Add onions to
top.
2 Place 1/2 cheese on top. Add cream.
3 Place in warmer of preheated smoker 3 hr. (or main
chamber for 1 hr)

1-2 boxes of baby portabella or white mushrooms

Yo Mamma's Brisket Rub

Directions
1 Wash mushrooms and pull stems out of caps
2 Fill caps w/ cheese. Sprinkle caps and stems w/ rub
3 Place in preheated smoker (240 F) and cook to IT 155 F

Freyja's chicken parm (faux fried)
Ingredients
18 chicken cutlets
9 provolone slices
2 40 oz jars marinara sauce
9 tsp minced garlic
2 16 oz pckg capellini
2 loaves garlic bread (frozen
1 1/2 sticks unsalted butter
3/4 24oz Italian bread crumbs

Directions
1 Melt butter in sm pot. Place chicken in butter, then coat
both sides in bread crumbs and place in 2 full size pans
2 Place pans in preheated smoker (250 F). Smoke to IT
165 F, then rip cheese into 3 pcs and place on top of
chicken. Place back in smoker 10 min.
3 Smoke garlic bread 30 min.
4 Bring lg pot of H2O to boil. Place capellini in boiling H2O
for 10 min. Drain in collander and rinse w/ cold H2O.
5 Pour sauce into med pot, add garlic, cook on med heat
15 min.

Directions

pan.Place potatoes on top of cheese, then top w/ the rest
cheese
3 At smoker, pour in cream and place in warmer for 3 hr. (If

Ingredients
1 pk mac noodles

Directions
1 Bring H2O to boil. Add mac to
H2O and boil for 15min. Drain
noodles
2 In 1/2 pan, place 1/2 of Cheddar
& Feta. Then the noodles. & rest
of cheeses on top
3 Beside the preheated smoker
(235F) pour cream into mixture.
Place into warmer pan for 3 Hr

Vegan Stuffed Peppers

Ingredients
6 peppers
1 med sweet onion diced
1 can diced tomato
2 cup rice
1 Tbs Firecracker Rub
4 cup H2O
This Sweet Little Piggie has some Heat Rub
3 Tbs vegetable Better than Bouillon
2 tsp Canola oil

Directions
1 Coat bottom of med pot w/ oil and add onion. Cook 10
min--stirring 4x
2 Add tomato, rice, H2O, Firecracker, and bouillon. Bring
to boil. Cover, turn heat to low, and simmer till most
moisture is absorbed. Remove from heat and let sit 10
min.
3 Cut top off peppers and remove from seeds. Fill w/
stuffing and sprinkle w/ Heat Rub
4 Place in warmer 45 min. (or main chamber 30 min)

Thomas Becket Potatoes Au Gratin

Ingredients
10-12 potatoes (sliced)
1 qt heavy whipping cream
1 stick sweet butter
3 cups cheddar cheese
5 Tbs flour
1 tps smoked salt

Directions
1 Place potatoes in lg pot 3/4 full of H2O and bring to boil.
Boil 10 min, then drain in collander and run cold H2O
over them
2 In med pot, melt butter then and cream, flour and salt.
Stir w/ whisk.
3 In mixture starts to thicken add cheese and remove from
heat.
4 Layer potatoes 1/2 way up 1/2 pan. Pour 1/2 mixture
over potatoes. Layer rest of potatoes and pour rest of
mixture over them.
5 Place in warmer for 3 hr----If your smoker doesn't have a
warmer, you can place in main chamber 235F 1 hr.
