Random sauce facts
1) the Alfredo Americans know is very different from it Italian Name sake. The traditional Italian Sauce is very thin usually just fresh grated parm butter and pasta water. The American version is a bechamel with parm and sometimes white cheddar added and flavored.
2) Bechamel is scalded milk flavored (usually onion studded with cloves) and thickened with a blonde roux. One of the 5 mother sauces of French cuisine.
3) Mornay is a bechamel with grated hard cheese stirred in ( traditionally a nice smokey gruyer)

In the test kitchen today... Onion Rings and Garbanzo bean flour. I'm pretty secure in it working the question is how will they taste. And yes I will be deep frying them. Guilty Pleasures made a little better with simple changes are better than no change at all. I positive I could batter freeze and bake too BUT WHY LOL

A little citrus (zest or juice) will brighten up your pie filling. Orange, lemon, or lime with berries. Lemon in Sweet Potatoes or Pumpkin.

simple pie crust
2sticks grated cold butter
1/2 cup ice cold water
2 cups flour plus dome for dusting
1tsp salt
1 tbsp sugar (optional)

sift 2 cups flour, salt, and sugar into a mixing bowl
Add butter to flour mixture and stir just to coat butter in flour
Make a well in the middle of the flour a pour in water and stir, either by hand or with a fork, until it just comes together
Pour onto a flour surface and need a couple of times to make a smooth ball
wrap in plastic wrap and refrigerate for at least 30 minutes or until you are ready to use
This pie dough will stand up to frying fir hand pies and us flaky and sturdy enough for any traditional pie
