WE'RE LATE! A very busy day today, but we got 'er done for the dinner crowd. We have a pork belly asian bun dressed with a Korean-inspired salad and red pickled onions.

No gluten free option for this one.

FRIENDLY REMINDER! We have smoked half chickens, and they're worth it!

We will also have the following sausages available to purchase:

-- Smoked All-Beef Jalapeno and Cheddar Sausage in Collagen Beef Casing
-- (RAW, Frozen) Fresh Garlic and Basil Pork Sausage -- We've had several people who wanted sausage but without curing salt (sodium nitrite).

THROWING IN THE TOWEL FOR TOMORROW (SUNDAY, JULY 5th).

Context: We are usually smoking "today" for "tomorrow" with the exception of chicken and turkey. With so many preorders and customers walking in, we dug into and exhausted all of our supply for tomorrow. It wouldn't make sense for us to open with only our Prime Rib steak special. WE WILL BE CLOSED TOMORROW, SUNDAY, JULY 5TH.

We're beyond honored and flattered that you would choose us. We're also grateful for your patience while waiting (longer than normal) for your meal and order. With everything being so expensive, we're blessed you'd spend your hard-earned dollars with our little shop. Keep being awesome FAMILY! See you Thursday, July 9th.

HAPPY 250TH AMERICA!!

I want to apologize beforehand but we will, more than likely, be turning off several items from our online ordering before we open. We walked into the shop this morning with a slew of pre-orders for today and while that makes us thrilled, it puts us in a difficult position for everyone else walking in. BRISKET is one of those items with Spare Ribs right behind it.

Dino Ribs - We smoke a few extra. They ain't cheap but people have asked for them. Probably won't bring them back as it's just way too costly.

Brisket Fried Rice - Today will probably be the last day for it as we're out of brisket to support it.

Sunday will still have Prime Rib Roast steaks!
